It's Resurrection Week Breakfasts for RE this week!  :icon_sunny:

Today we are having "The Inter-Railer" Breakfast.  This is what I subsisted on for several of my trips around Europe on their rail network, spending many of my nights either sleeping on overnight trains or in train stations.  An expensive night was buying a $10 bed in a hostel.  Not much cooking for these breakfasts (and lunches...and dinners...  ::) ) but still food goodness if reasonably fresh.  Like they haven't  been in your backpack with no refrigeration for 3 days.  The hard boiled eggs were about the only thing I "cooked", boiling the whole dozen when I bought them on my camp stove and storing in my pack for about the next 4 days.  I would generally have 2 for breakfast and another one sometime during the day.

I missed Breakfast AND Lunch today!  Lotta napping!  Legs are really getting bad folks, I'm going to have to get some sort of operation for a fixup or I am chair bound for the rest of my pitiful life.

Anyhow, we'll make up for it with a nice STEAK🥩 dinner!  If you are a PIG🐷, you might consume this one yourself.  More normally, this is good for 2-4 people.

We can't leave Resurrection Week without the Piece de Resistance of Gourmet Breakfasts, Steak & Eggs in the Filet Mignon Eggs Benedict Version. I actually have never had this in a restaurant, only made it for myself a few times.  My general recipe is to pan sautee the filet in garlic butter, then drop it on an English Muffin with some sharp Cheddar Cheese melted on it, then add a Poached Egg on top of that and cover with Hollandaise Sauce.  A Breakfast Meal fit for a King!

Today we are having "The Chinese".  Generally purchase from a storefront Take-Out Chinese food purveyor, not a full fledged restaurant.  The ones with the the cool cardboard containers that are folded into little trapezoids.

It's an Oxymoron Morning for breakfast from the Sunday Smorgasbord for RE.  Chef Pepe came up with these magnificently HUGE Shrimp🦐, which he prepared Thermidor style.  Can't wait to dig in! 😋

Back in the day, my favorite cut of BEEF🥩 (It's what's for Dinner!) for the BBQ was the NY or KC Strip Steak🥩.  Not as fatty as a Ribeye🥩 and not as tender as Fillet🥩, but a real nice meaty texture and enough fat there to give it good flavor and juiciness when grilled.  You want the cut at least 1" thick, 1.5" is better.  Sear at a hot temperature to seal in the juices then cook gently over a lower flame for an even cook to medium rare for most people.  Choice cut or Prime, no Select.  Wagyu is good too, but expensive.  Choice is usually the best at a good price if you hunt down a good one.

Serve with a Loaded Baked Potato🥔.

🍳 Doomstead Diner Breakfast Special: 5/14/2018
« Reply #697 on: May 14, 2018, 04:00:02 AM »
I went out to IHOP for Breakfast yesterday, for the first time in how long I have no idea.  Reason was that Computer Rennaisance is in the same strip mall, and Serra just got a job there as a server (aka waitress).  I had to go to Computer Rennaisance toi get one of my laptops upgraded to use LINUX.

They no longer offer Buckwheat Pancakes on the menu, those were out.  :(  I am not a huge fan of Buttermilk Pancakes which are the only ones they now offer.  I opted for thher simple breakfast of 2 eggs over EZ. two link sausages and hash browns, with an English Muffin substituting for the toast that usually comes with this meal.

With the Orange Juice I also ordered, you wanna know the PRICE of this meal?  $14!!!!

As restaurant breakfasts go, this one was cooked OK.  However, this price is just ridiculous.  The 2 eggs I can cook up on my camp stove in the Homeless encampment for $0.25 each.  The 2 sausages for $.30 each.  The Hash Browns for $0.30.  The English Muffin another $0.40.  A small OJ container if I don't have a larger one in the cooler $1.  MOST it costs me to make the VERY SAME breakfast on my camp stove is around $3!  Now I can see doubling the price of the fixins, but QUADRUPLING it?

I did good for me getting through this meal, I ate about 3/4 of it.  I ate both eggs, 3/4s of the Hash Browns and Sausages and Half the English Muffin.  Drank all the OJ.

I may go there one more time to over-pay for one of their omelets while Serrah is working there to see what kind of job they do with one of those..  Honestly though, I can't see how this chain stays in Bizness.  Those prices are ridiculous for a Breakfast Meal!  ::)  I used to pay $2-3 for a breakfast.  I can see how inflation would bring it up to $5, but $14? ???.  That is just insane.

That's actually very good for you, is it not? Maybe more than you've been eating in a week. Good for you.

Well I know my Jap restaurant "Tokyo" here in the valley has about doubled its prices since I got here a decade ago, The Sashimi Appetizer I alwasys get is up to $20 for 8 teeny weeny pieces of JUST THE FISH!  The full Sashimi meal is somewhere in the Stratospere of $40.  That is STILL not however QUADRUPLE the price for a couple of hormone full eggs, 2 frozen sausage links and frozen shredded potatoes.  The fish is at least fresh even if it is loaded with radioactive vitamins.  Did you know there is exactly ONE and only one Jap restaurant in the whole Mat-Su valley?  I live in a cultural food hell.  I should be greatful there is an IHOP at all for a shitty Amerikan Breakfast at any price.  ::)

I never finished the "Billionaire Burger🍔" week due to being on my Death Bed for a few days until the Medical Industry got me repaired, at least temporarily anyhow.

Today we are having Jack Ma's favorite, the Asian Burger🍔.  Basically, throw some Chinese Vegetables and some Hoisan Sauce on a Burger🍔 and call it Asian. ::)

I gotta think that you are paying an "Alaska premium" for that bane of military commanders, "extended supply lines." That and it being Alaska. I thought the prices in AK were high in general, anyhow.

I would have thought there would be more Asian food.

It's Meat Monday here at the Diner again!  :icon_sunny:

Today we are going for Fidel Castro's favorite meal before the Grim Reaper came for him a couple of years ago.  I look forward to meeting up with Fidel & Che in the Great Beyond and sharing some Ropa Vieja.  A National Dish of Cuban Commies, generally made from leftovers of some of the cheapest part of the cow.  Add peppers, caramelized onions and tomatoes, stew and ladle over white rice with black beans, and it's almost as good as Feijoada!

OK, back at home and no over-paying for a very average typical Amerikan Breakfast of Sausage, Eggs and Hash Browns served up by a chain restaurant which somehow is still in Bizness. ???  :icon_scratch:

I wanted to create for today the "Traditional" Diner Breakfast.  This is hard because Diners are not EZ 2 Pleeze and their tastes vary widely. Price also a factor since some Diners are Poor while others are RICH🤑.  I came up with a 3 course meal which has the requisite Egg Based dish, a Bread based dish and a Soup/Bowl dish.  In breakfast meals circumnavigating the globe, you can find variations on all these items which you can substitute when you order a "Diner Grand Breakfast".

RE

The Doomstead Diner Grand Breakfast

Course 1: The Carbos(This can include anything from various breads and toppings to stuff like Pancakes & Cinnamon Rolls, Muffins etc.  For my choice for this first in the series, I go with Bagels & Lox)

The Egg portion of the meal is central to the Diner Grand Breakfast, as it is to breakfast from many countries all over the Globe.  I thought hard about this, but in the end had to go with Quiche, which "real men" might not eat but have a HUGE variety and which you can make on Sunday and then microwave all week and they taste just about as good as fresh.  For today's initial Quiche, I had to go with the Classic Quiche Lorraine.

Course 2: The Eggs(Other egg recipes besides Omelets can be substituted.)

Quiche Lorraine

The Bowl portion of the meal varies widely depending on taste and your ethnicity.  You can go with just Oatmeal or Wheatina or go for an Asian Noodle variation.  This was tough for me to decide on an initial variant to include in this first edition of the Diner Grand Breakfast, but again I went with a personal favorite, Japanese Miso Soup which actually makes a great lunch and also a great starter course for a Nip dinner as well.  My Miso soup is LOADED with firm Tofu as well as plenty of Seaweed and I also usually include some Oyster or Straw Mushrooms also.  The variation below is pretty basic.  You can add a LOT more stuff to a bowl of Miso!

Course 3: The Bowl

Missed Lunch again today.  :(  More napping and trying to get the digs better arranged for my new level of Crippleness, which now makes just standing up painful, much less walking.  I have taken now to using the cane to get myself around the digs with somewhat less danger of falling down.  I still need to be able to get from my bed to the office chair to the toilet to the fridge a couple of times a day at least.  I am ordering more electric assist devices to assist me as I take my adventures out of my office chair and the world of my imagination and into the real world where this decaying meat package actually lives at the moment.  I have an appointment with the Vascular specialist tomorrow, I am hoping we can come up with something to do soon.  Otherwise I may be forced to head to the ER for another Hospital stay while they figure out WTF is going on with my legs.  My heels on both feet are very painful to have any weight on them whatsoever, which of course makes walking very painful.

I have ordered a couple of varieties of mechanical winches and one electric winch to experiment with, along with a wheel walker with a seat as a more stable assist than the cane as I traverse the long distances I need to negotiate to make it around the digs.  I am not using the Porch at the moment because I am afraid I won't be able to make the step back up into the digs which is about 4", or possibly fall down on my way out, also a major disaster in the making.  I need to build a ramp there that the Cripple Cart can handle, 4" of Bump is way too much for it, biggest bump it might power over or get up onto is about 1".  I am also going to try and order a Chinese manufactured standing Electric Scooter of the "Hoverboard" modality.  This one has a control tower you hold onto, which I definitely need.  Has good speed and big wheels.  Lightweight and transportable in your car trunk.  1/3rd the price of my new Folding Trike seated model scooter.  I am still OK standing as long as I tilt slightly forward and keep the weight off my heels, although not entirely sure how long this "new normal" will last.  Not sure as of yet if the Chinks will ship one to Alaska or when it might arrive if they will.

Anyhow, it's Chicken🐔 Tuesday here again on the Diner.  Tuesday has become my default Chicken🐔 Special day even though there is no alliteration like "Steak Sunday" or "Meat Monday".  You do want to have at least one Chicken🐔 a week though to make stock for your Chicken🐔 Soup variation of the week.  For tonight 's dish we are Turning Japanese for Yakitori Chicken🐔 Skewers a very tasty version of the Chicken🐔 Kebab.  You should distribute White Meat and Dark Meat evenly on both skewers , and cook the Wings separately.    Butchered Carcass goes in a slow simmering pot of water along with the gizzards and neck to make stock.  Get the most out of your Chicken🐔!
