Chocolate? Really?

The only chocolate "food" I can think of that I eat is mole. The sandwich looks pretty good though. I'd give it a chance.

Personally, I would "hold the chocolate" on this sandwich.  I like the rest of the ingredients for it though.

For me, chocolate is strictly a desert item, chocolate ice cream, chocolate cake, chocolate brownies etc.


I don't (didn't) even have desert that often though.  I'm not a big fan of sweets generally speaking.

Yep, I'd say chocolate in chili is an idea almost certainly "borrowed" from mole, which is not a staple of the Mexican diet, but more of a holiday food saved for special occasions.

The chef who was the foodie for Austin's Fonda San Miguel restaurant passed away, but I do have his cookbook. Their Sunday brunch still offers two different kinds of mole. That place was our special birthday/holiday Sunday brunch destination for decades. You guys would love it. You have to go more than once, because you literally cannot eat enough to try everything they put out in one sitting. I have so many good memories of eating there. My then gf (now wife) took me there in 1980. I still remember the ceviche. Many Father's Days and Mother's Days spent there with family. It is perhaps the most beautiful restaurant I've ever visited, inside and out. The owners accumulated a whole lot of signifiant Mexican art too. Austin A-Gays.

Mini-Chickens!🐔 :icon_sunny:  These little birds are GREAT if you like all the parts of the chicken🐔, white and dark meat, but aren't such a PIG🐷 you will eat a whole full size chicken yourself.  The meat also has a slightly different texture and flavor, it's a little more gamy although these are cultivated now and not really "game" as in wild.

For the PIGS🐷 out there, other restaurants often serve up TWO of them on one plate for a meal.  At the Diner, we keep it to one.  If you want to pig out on two of them, you will need to pay for a second dish.

Asparagus and Scallion Beef
 

                                       


Now, my main criteria to picking a recipe is it must be easy and not time consuming. This meal met that criteria because it required one pan and only took me 30 minutes including prep time. I used a Flank Steak, which gave it a nice flavor. The key to using Flank Steak is to always cut against the grain so it doesn’t become chewy. I hope your family enjoys as much as I did!

It is great served over rice.

Asparagus and Scallion Beef
Author: Dana Snook
Recipe type: Dinner
Cuisine: Asian
Prep time:  15 mins
Cook time:  15 mins
Total time:  30 mins
Serves: 4
 
One dish meal that is fast and delicious.
Ingredients

    16 oz beef flank steak, sliced against the grain
    2 tablespoons oil
    1-inch ginger, grated
    1 bunch asparagus, cut into 2- inch lengths
    6 stalks scallions, cut into 2-inch lengths
    2 teaspoon cornstarch
    Sauce:
    2 tablespoon oyster sauce
    1 tablespoon Liquid Aminos
    2 teaspoon olive oil
    8 tablespoons water
    2 teaspoon cornstarch
    1 tablespoons dry Sherry
    2 teaspoon sugar
    ˝ teaspoon salt
    ⅛ tsp of fresh cracker pepper

Instructions

    Put sliced beef and cornstarch in storage bag and coat. Allow to sit for 10 minutes.
    In the meantime, combine all the sauce ingredients, whisk well and set aside.
    In a wok or frying pan, heat up the oil until very high heat, stir-fry ginger for 30 seconds and then toss in beef slices and continue to stir-fry for a few minutes.
    Add asparagus and scallions and sauté for about 3 minutes.
    Add in the Sauce and stir-fry for an additional 4-5 minutes or until the sauce thickens.

My contribution for tonight is this handsome looking NY Strip Steak🥩, and another recipe which includes CHOCOLATE!🍫  :o

Strip steaks🥩 are among my favorite cuts of beef, they're not as FAT laden as Ribeye🥩 but they still are good on the BBQ.  Not as tender as a fillet, but they have a more robust texture.  You want either real good Choice Beef 🐄 for this cut or Prime Beef 🐄.  Do NOT buy Select!  Too tough. Also do NOT overcook!  Wagyu Beef🥩 on the other hand again IMHO is just a little too fat laden.

It's Soup🥣4Breakfast this week at the Diner!  :icon_sunny:  Soups🥣 are not generally popular here in the FSoA for a breakfast meal, but around the world they are very popular.

For today, we will begin with a CLASSIC, which most Amerikans have had at one time or another visiting a Chinese Restaurant, Egg🥚 Drop Soup🥣.  Like with many other recipes, there are a bazillion versions of this one, to start off the week I chose one which looks most like the Egg🥚 Drop Soups🥣 I had in Chinatown.

Back when I was doing my first BBQing in the "backyard" of the Flushing, Queens McMedium (nicer than a McHovel, not as big as a McMansion) I lived in until going off to the dorms at Columbia, this cut of Pork🐖 was my favorite to use.  First off it was CHEAP, and second it has lots of FAT. 😋  My recipe was simple, I would just baste on Saucy Susan Apricot Glaze a few times  while cooking slowly over a relatively low flame.  Other than cooking them myself over the years, I've never had them anywhere else.  No restaurants I ever hit had them on the menu.
