It's just that the breakfast videos come on at 10 am my time and I don't eat breakfast on work days...so I'm hungry as hell. Last thing I want to look at is a tasty omelette.

I'll check out the crab video, being a veteran crab boiler myself, even though we don't get the best here.

The shrimp here are right up there, however. Oysters too.

A hint on the Crab.  I'm prepping it to cook it Japanese Tappan style, not doing traditional steaming or boiling.

No more info than that, I don't want to spoil it. lol.

🦀 KING KRAB KLAW vs the CRIPPLED COOK of COLLAPSE...
« Reply #61 on: February 19, 2019, 01:42:48 PM »
...in a Battle for All the Marbles.

Seriously the hardest King Crab Claw I ever ran into.  Crab shells usually are not as hard as Lobster Shells.  This Crab had to be at least 25, maybe 30 years old.  HUGE, the Mother of All Crabs (MOAC).

This was a Battle for the Ages of Cook versus Crab.

🥞 Diner 7th Anniversary Breakfast: Blueberry-Buckwheat Pancakes
« Reply #62 on: February 20, 2019, 05:58:49 AM »
The Crab Prep Vid was so popular all of TWO Diners besides myself have viewed it! lol.  Off to a slow start here.

For this morning's Diner 7th Anniversary Breakfast, I am going to copy/paste.  I have so many leftovers in the fridge now in reality my breakfasts are trying to consume my leftovers before I have to feed them to the dumpster bacteria and various scavengers haunting them just waiting for me to dump a bag in there.

I am also already 2 days behind on my plan to finish the meal and be able to Plate Up by Feb 19.  I gotta get the Main Course DONE here and get this cooking marathon that nobody watches DONE here!

If I HAD time (and some appetite left) this would have been one I really cooked up.  My favorite pancakes, and I have the Buckwheat flour in the preps.

🥞 Diner 7th Anniversary Side Dish: Asparagus & the Hollandaise Earthquake
« Reply #63 on: February 20, 2019, 02:13:28 PM »
So, it's Monday Morning and I am setting about the task of doing the Asparagus with Hollandaise Sauce side dish for the Surf & Turf.  Steaming the Asparagus goes well, and I pass on a few tips on how to get the texture and doneness just right.

Then I get to the Hollandaise, which also goes well except for breaking the yolk so it didn't look so pretty before going in to the sauce.  Doing real well right up until I got to adding some Cayenne Pepper at the end of it.  BOOM! AFTERSHOCK!  4.4, and close by too, about 5 miles to my southeast.  This doesn't scare me too much, although I do knock down the power to my hotplate and get ready to head for the door if it gets worse, but after about 10s it stops.  My camera however was not so relaxed, and took a dive off its perch, and I hadda finish the hollandaise without getting the finale on video.

However, I did get stills of the sauce and the asparagus with the sauce on it for the full menu Plate Up when all this gets done after the quake was over.  My Cripple Helper is due in tomorrow to assist in getting the Steak & Crab done together so those two can actually go on a plate together.

Hoping to have the Full Feast by Fri or Sat.

🥞 Diner 7th Anniversary Main Dish: THE BIG COOK
« Reply #64 on: February 21, 2019, 05:19:10 PM »
You may have noticed that I was MIA all day today, which normally I am not.  I was offline from 9:30AM to 3:45PM today with my Sous Chef and Cripple Helper doing the final COOK of the Diner 7th Anniversary Main Course of Alaska King Crab and Ribeye Steak with a Side of Asparagus with Hollandaise.  We did up a fresh batch of Asparagus/Hollandaise so I could Plate Up the whole main course together.

We did other tasks as well today, but this was the BIG ONE.  CH who doesn't have much experience as a Chef needed a good deal of instruction and help.  But I needed her good arms to pull this off.  Besides, as I said she will bring in the viewers. :)

It was a cook for the ages, again.  Once again, it has a climactic moment that is amazing.  I also did this one with not 2, but THREE cameras!  I haven't reviewed the vids yet or started editing.  This will take a while.  ::)  I will go on a marathon editing session after I rest up and tomorrow to get it done as fast as I can.  However, no way will I be able to plate up the whole meal and have it ready for Diner Consumption before Sunday, and even that is a stretch.  However, it is still Feb so still in Anniversary month for another week or so.  I'll have the Finale of this marathon up before March rolls around.

Now I gotta go review these vids!  Can't wait!

🔥 Diner 7th Anniversary Main Dish: FIRE! FIRE!
« Reply #65 on: February 22, 2019, 09:19:32 AM »
I managed to avoid setting off the Smoke Detectors for a whole month of my cooking extravaganza.  Not so on Thursday! lol.

The Outtakes and Bloopers from this set of videos is better than the cook itself!  :icon_mrgreen:

It's only a 1.5 min snippet so hopefully some Diner will find the time in his bizzy day to watch it.  ::)

🍆 Diner 7th Anniversary Guest Chef Recipes: Vegan Indian Curry
« Reply #69 on: February 25, 2019, 01:05:35 PM »
The Diner 7th Anniversary FEAST is FINISHED, at least the cooking end of it.  I'm not holding the actual feast until the 28th though, the last day of February to cap off a full month of celebration of this auspicious occasion.  So with 3 days still to go until then, I don't want you guys to starve so I am bringing in Guest Chefs to pick up the slack.  I need a BREAK! lol.

Today we're going Vegan, with a yummy Indian Curry.  The Indians know how to do veggies.

🍳 Diner 7th Anniversary Guest Chef Recipes: Vegan Quiche
« Reply #70 on: February 26, 2019, 11:41:47 AM »
Tomorrow s the Big Plate Up for the Diner 7th Anniversary FEAST!  :icon_sunny:

For today, we don't want to starve though, so here's another delicious looking recipe from a Guest Chef.  Another Vegan Dish, and Quiches are good for Breakfast, Lunch or Dinner, whatever.  Although I think eating them 3 times in a day is overkill. lol.

Egg, Mozarella, Onion & Broccoli Quiche

🥝 Diner 7th Anniversary Feast Day Breakfast
« Reply #71 on: February 28, 2019, 08:00:43 AM »
It's Diner 7th Anniversary FEAST Day!  The last day of our full month long celebration of the Survival & Success of the Doomstead Diner Blog & Forum (and all our other associated products as well).

The Feast will come later in the day, likely while I am in Anchorage enjoying the IRL FEAST of the Musher's Banquet for the Iditarod.  For breakfast this morning, we're eating light again to save room for the Pig Out.  Vegan-Friendly again this morning. :)

We close our 7th Anniversary month of February 2019 with the Plate-Up of the FEAST, prepared over the last month my the Chief Cook & Bottle Washer on the Diner, me.  It's been a loooong month of slaving away in front of the stove to make all these dishes just the way *I* like them.  If you like your Steak Medium and not Rare, too bad.

You can find a complete record of the cook with all the recipes and techniques on the new Cooking Zone Reddit sub or on the Diner YouTube Channel.

And now, without further ado, tonight's Menu:

The Appetizers

On Garlic Crouttes

Salmon Dip with Capers

Blue Cheese

Liver Pate with Tomato

Steak Tartare with Medium Boiled Egg

The Salad

Hearts of Palm, Tomato, Avocado & Kalamatta Olives

(with the dressing of your choice)

The Soup

Miso with Tofu, Seaweed & Green Onions

Image result for miso soup

The Main Dish

Surf & Turf

King Crab Tappanyaki & Ribeye Steak with Mushroom Cabernet Sauce

Asparagus Hollandaise accompaniment

The Steak,Up Close & Personal

Done Rare

…and as a Bonus, here is the Final Cook of the Main Dish in full detail.

Enjoy the grea Cornucopia of Food we have now folks, if you can still afford it.  It's not gonna last forever.

For those of you on tight budgets, next week I will be returning to my roots with SNAP Card Gourmet Recipes to eat well on $5/day, and if you are careful about it and watch your pennies, once or twice a month you can afford to make a FEAST like the one above.  Tune in at the Diner Pantry for more great Collapse Cooking tips!
