I am starting a new tradition here on the Diner, The 12 Days of Winter Solstice Diner Collapse Potluck Feast & Music Festival.  :icon_sunny:

These Potluck (Potlach) Feasts and Music Festivals will be held twice a year, at the Winter & Summer Solstice.  Each kicks off on the day of the Solstice, December 21st for the Winter Solstice this year on Planet Earth, this coming Friday.

There are a few rules to this though if you want to partake of the meals we share here inside the Diner.

1- You must contribute either an Appetizer to snack on before the main meal and/or a Side Dish, Salad, Soup, Wine, Beer or Dessert to go with the Main Course.  I will be preparing the Main Course, and I will give a Heads Up the day before what the Main Course will be so you can think about & choose your accompaniment to compliment the Main Course.  The Big Feast Kicks Off around 2PM Alaska time, 6 PM EST.

2- Holiday Themed Music is suggested, but not required.  Add your favorite Tunes to the Playlist for the 12 Days, which finish off on Jan 2nd.

3- There will be a nightly Collapse discussion around the dinner table on a current Hot Topic hitting the newzwires.  All diners at the table are expected to chip in their 2 cents on this topic.


This year the Winter Solstice falls on Fish Friday, and we will kick off with a personal favorite of mine, Alaska King Crab.  :icon_sunny:

I hate white wine, so that makes wine pairing hard for me on this one. But as a non-tradtional foodie, I have found that a good Pinot noir can be swilled with seafood and it tastes just fine. Who knows where prices will go, what with these Cali fires? Get it while you can.

This Rodney Strong Pinot noir is good...a Russian River Pinot noir, which are among the best, and Rodney Strong is a big outfit that makes a whole lot of wine, so they can sell it pretty cheap. I get it at Sam's Club, which is also where I buy my King crab, btw.  Welcome to America, comrade. Only 15 bucks and change. It's probably what I will serve with Christmas dinner.

Appetizers are not my long suit...but I like a good spinach dip. With decent tortilla chips, not that Frito-lay truckstop (no disrespect intended) quality crap.

I prefer the spinach dip with artichokes and I like the baked version. Bartlett's has this on their menu, a holdover from the day when it was a part of the Houston's chain.

I'm non-traditional on wine choices also, and prefer the reds to the whites in general.  Also Pinot Noir is a favorite, along with Merlot.

I am in the midst of huge computer woes at the moment.  I'm on a backup laptop.  Looks like the Dell may have to go in the shop for an overhaul.  Not a good time of year for this.  I probably need to wait until Jan 2nd to bring it in.

That Taittingers is great stuff but for some reason it has always just been a Holiday treat for me. Chianti Classicos are my favorite choice a majority of the time. Great value and quality are the reds from Tuscany.

 From your lips to God’s ear. I give thanks every day that I live with such a woman. She really gets me. If you’ve been a great source of support during this particular deal, as well as others.
Interestingly, Chianti is my favorite wine of choice, particularly as when I go to our favorite local Italian restaurant, as we did last night Prior to surgery. No wine for me though; none for 24 hours before surgery.
I’ll be looking forward to a nice glass when I go home, we try to be sometime Sunday.

Wise has a real good disk cleanup tool and it's free in case you are not aware. It may be worth a try.  :dontknow:

Not a cleaning problem.  This is a networking problem and it is going through both bluetooth and wifi.  I've lost about everything in conections, mouse, printer etc.  The Op system has been hinky for a while now.  It's time to get her in the shop.

The early bird catches the worm...or in this case one of the juiciest cuts of meat you will ever eat off a skewer on a BBQ.  You can't usually find this cut on Butcher shelves or in the FSoA Food Superstores, but you can get it online or sometimes your Butcher will order it for you from his supplier.  A real Brazilian scrumptious appetizer, the only danger being you will eat too many skewers and ruin your appetite for the Feijoada Feast later this afternoon.  ::)

Christmas Eve has ARRIVED! 🎅  So it's time for some Christmas Appetizers before tonight's Feast, which you will note is Take-Out Pizza.  A couple of reasons for this.  First, It is a New York Shity tradition to eat Take-Out on Christmas Eve.  This because you are bizzy preparing food for the Christmas Dinner the next day.  The usual Take-Out choice in NY for Xmas when I lived there was Chinese, but any takeout was fine.  We're doing Pizza Take-Out tonight since AZ suggested that choice back a ways in the thread.

You also may note that tomorrow's Christmas Dinner isn't the common Turkey or Ham or Prime Rib most Amerikans go for these days, were different on the Diner so we're having GOOSE!  Don't bother trying to get a Goose at your local Food Superstore though, they never carry that even at Christmas time.  You'll have to order online.  At the Diner, we have our own flock of Geese migrating by our SUNstead regularly, so it's not a problem to nail a couple for Christmas Dinner and throw them in the Walk-In Freezer at the Diner.

We're bizzy prepping up for tomorrow's Christmas FEAST, and the Pizzas for nourishment tonight while the Diner Chefs work their little fingers to the just arrived at the door.  We ordered them over the Internet and paid with Credit Cards, like any good normal Amerikan does nowadays.  I ordered a selection fo Pizzas for the crew, but of course somebody always wants one nobody else does.  On principle, I will NOT order a Hawaiian Pizza!  Pizza and Pinaples is like putting mustard and ketchup on ice cream.  Blecch.

OK it was midnight Paris time, but let's not nitpick. ::)  Also, since I don't have a Chimney he came disguised as a UPS driver and the Gift Box was disguised as a package from Amazon.

In reality of course, I bought this Present for myself.  Since I am a Monast Hermit, I don't have any kids who will buy me presents, and both my parents are dead so no more Christmas Cards with a check in them either.

If you followed my discussions with C5, you know I am a Knife Freak.  Now, I have already just about every knife I will ever need for cooking or for hunting & fishing if I ever have a recovery that will allow me to do that again.  But I recently bought an 8" Chef's Knife crafted from Damascus Steel, and besides being an amazing cutting tool, it's also a real Work of Art.  It gave me a new Enthusiasm to pursue, collecting a full set of Damascus Steel knives which will be an Heirloom Gift to the SUN Foundation when I buy my ticket to the Great Beyond  They are of course relatively expensive, but I shop for Bargains that are ON SALE, so not too much for them.  Also the Japanese are cutting prices to try and keep their export market alive.

For this year's Christmas, I bought a Hunting/Skinning Knife and a Straight Razor.

Real Bone Handles too!

A straight razor is a knife I did NOT have before, even a cheap one.  Who would want to use a cheap straight razor on their face anyhow, right?  So I tried it out and it's really cool, and quite sharp right outta da box.  I will however need to get a Strop for it in addition to my sharpening stones.  For now though, newspaper makes a decent strop, and really I'm not going to use it, my electric Braun is much faster and I don't need to be so careful  It will just go On Display in the Candle Shrine in my digs.

The Hunting Knife also super sharp when unboxed, especially for a knife with this kind of weight and heft.  This is a real Macho Man's knife, you could chop down redwoods with it!  Well not quite, or it would take you your whole life to do it anyhow.  But it's still quite a robust and heavy instrument.  A real Macho Man would probably have chosen one with a longer Blade like Crocodile Dundee carried, but knives like that really aren't very useful in the field unless you are going Mano-a-Mano with a Croc or a Grizzly, something I went out of my way to avoid even when healthy.  A shorter blade works much better for skinning and de-boning a carcass.  For Quartering, carry a good heavy Butcher's Knife in your toolkit.  You can also use a Hatchet for that.  You also want a good Bone Saw of course.  For that a Hacksaw works the best with replaceable blades, I'm not looking for one of those in Damascus Steel.

Probably the next Damascus Steel blade I buy will be a Fillet Knife.  I saw some nice ones on sale, but I'm still torn as to whether I want a stiff blade or a flexible blade.  Flexible blades give you better close to the bone cuts, but they are not as robust.  In any event, I spent enough for 1 Christmas on stuff I will never actually use and don't really need.

Another Enthusiasm I have these days is for Cast Iron Cookware, the kind Lodge Logic sells.  I have a nice Skillet and a small Dutch Oven, as well as a small sauce cup.  However there are pans in a ouple of sizes I covet as well as a big 2 Burner Griddle.  Not cheap stuff here either, and I don't really need that either, although if I had it I might occasionally use it for cooking.  However, my current more modern pans work just fine, so still unnecessary.  The cast Iron stuff though is indestructible, and well cared for will last into the next century at least, if there is anything left to cook t that time anyhow.

Anyhow, I hope all you Diners also got what you wanted for Christmas and are enjoying playing with your new toys.  :icon_sunny:

I'm glad you started this thread. Christmas is all about tradition. The recipe for these cookies was passed down from the missus' Mom, who wrote it down so it wouldn't be lost.

Please eat them guilt free...they were mostly baked by my Millenial children, who are good socialists. Including my Asian daughter-in-law, whom I regard as (hopefully) adding some good genetics to our family.

The only thing I did was wash the dishes.

The skinning knife is AWESOME!  I wish I had one like this back in the hunting days. It's still great though.  I look at it, then I close my eyes and let my imagination do the rest.  I bequeath it to you when I cross over to the Other Side.

The razor is exceedingly sharp coming straight out of the box, but a real Barber from the old school wouldn't be satisfied, and neither am I.  I ordered a nice Leather strop for it on Amazon.  Don't forget to use the smile.amazon.com subweb for your purchases and designate the Sustaining Universal Needs Foundation of Boiling Springs, SC as your Charity.  Bezos has already given SUN over a dollar just on my purchases over Christmas, and I didn't buy anything that expensive.

For now until it arrives, I'm using a newspaper strop, which works pretty good.

I suggest wearing Leather work gloves while stropping until you get really good at it.

As I said though, I don't use it much for really shaving right now, it's a future prep for when my electric Braun  rechargeable doesn't work anymore.  I just practiced with it a couple of times.  No cuts, but you do have to be really careful.

Today is Christmas day. A day that, as a child, filled me with a profound sense of wonder and excitement, (yes mainly because of childish ignorance and the presents) but also because everyone else around me in my family and culture had that same feeling, and like so much of the human experience, it was infectious. A collective agreement that this day, beyond all others, was something to get exited about.

As I became older of course the excitement and wonder dulled, replaced by cynicism concerning the rabid commercialism that Christmas had become synonymous with, like a parasite consuming its host, leaving a void that turned the whole Christmas period into a most depressing affair. The extra joviality that is all but forced down your throat added to creating a sense that this was all a sick joke performed by the insane. A true nightmarish situation that led to many an arguments and countless hours of depressive self isolation. Not to mention the drinking that one year led to breaking both heels.

This trend looked only likely to continue, and worsen, especially with the solidifying knowledge of the coming collapse. Like a fast growing number of our planets inhabitants I was in the full throws of Climate Grief. Something I can say to be by far the worst sickness I have ever experienced. The anger, the anxiety,  the relentless depression, the complete loss of hope in all aspects of life. A place that I'm sure many reading this find themselves in, where the past becomes a foolish waste, the present becomes a distasteful joke, and the future holds only pain, disappointment, and chaos.     

First of all dear reader, I would like you to know that, if you do find these sentiments ring true with you, then you are right. You are absolutely right to think and feel these things, anyone that tells you otherwise clearly has no grasp on reality or the human condition. Everything that we have ever known, the comforts and distractions, the traditions and trappings, running water, electricity, healthcare, food delivered to your door, will at some point, be it a year or a decade, dissolve like the snow upon the mountain. Replaced by, well nothing. To pretend otherwise is to be content with a disconnect, a virtual reality akin to a blind religion.

Like a 60 year old life long smoker, we have been given a death sentence, an undetermined amount of time, the bill, and shown the door.

So, with all this being said, having accepted our fate, that no concrete bunker will suffice, no miracle science will present itself, and the intergalactic council simply doesn't have room or the patience for any more self harming migrants, what is there to be happy for, or even just contented about this time of year?

Well, dear reader, last year I would have given up right there. Sunken into the deep pit of despair that had become so familiar and comforting, hit the bottle and driven the screws further inwards in self destruction and self harm. Stoic in my surety of the future, armed with unshakable facts, armored by thick layers of statistics, riding high on the coat-tails of the four horsemen as they circle overhead, waiting patiently to land.

But, somehow, something, somewhere inside me has changed. Or perhaps a more appropriate word would be, evolved.

After four years of obsessive, uncontrollable, soul-sucking, nauseating, inconsolable Collapse Fatigue, there is only one real conclusion that I find myself left with. Something so obvious that it seems silly to commit it to a forum, especially one such as this. But the fact remains...

Change is the only universal constant.

The fear that has gripped me so relentlessly is that of my own mortality.

I project that mortality outwards onto countries, empires, technology, species, the ecosystem of planet Earth itself, and whilst it is clear that their destruction shall come to pass, and within my lifetime no doubt, the option of all these things being preserved was never on the cards.

What difference does it make if I die in 50 years in comfort, or in 10 years along with the rest of my species, or tomorrow crossing the road? Why fear the inevitable?

Perhaps we give humanity a little too much credit, expecting the imperfect to be capable of the sublime. A human species without greed, cruelty, ignorance, and violence would be blissful indeed, but would it still be the Human species? Of course these may all simply be symptoms of our modernization, but all I have is the experience my short time has given me, and a dream of utopia doesn't last long when presented with modern reality.   

I have a loving family around me, something I realize I am profoundly lucky to be able to say. A family that for almost three decades, I honestly didn't seem to notice. Taking it so much for granted that it had completely melted into the background of a anxious and self interested life. Now however, its like they are suddenly in HD. Soon they will be gone, and so now they burn bright.

Maybe its simply age that brings with it a certain appreciation and understanding, but acceptance of mortality and the finite nature of all things seems to have offered a helping hand. Stranger still, would I have found this kind of appreciation if it hadn't been for the coming collapse? would I have spent my life in blissful ignorance, wasting the days slaving away until suddenly, poof, gone. With perhaps only a brief moment to look back and go, fuck... 

For those that go without this luxury however, for those alone this Christmas, and any other of the 365 days we have decided don't mean quite as much for some ridiculous reason, consider this.

Your knowledge makes you powerful, but to obsess over it, like anything done in excess, is harmful. You are, as of now, in a far better position than the majority around you. By understanding and accepting the coming reality you won't be as blindsided when it arrives. Perhaps you will even have gained skills to help out a little when the wave finally hits. But then maybe it will topple us all just the same and in which case, so what? If anything that seems fair.

One of the most thought provoking things I have ever seen is a video of the 2004 boxing day tsunami. As the wave gets ever closer to the shore, there is a single man, laying on his surfboard, on the now deserted beach, waiting patiently.

To my mind there where three possibilities as to why this man decided to remain.   

One: He was completely ignorant to what was about to happen, and so died as casual as he lived.     

Two: He truly believed that he could overcome the coming disaster and died fighting against the odds, his destiny his own.

Three: He had accepted his fate, and died laying on a beach he enjoyed, above his surfboard he held dear, free from denial.

*it is of course possible his actions arose from shear panic but that rather spoils the analogy*

I like to think It was the third option even though that is possibly the least likely, and would love to believe I could do the same, although only time will tell. But for now, the romanticism is a comfort.

Another such comfort is the fate that will befall the 1%. Yes it is possible that some might have even some semblance of ease and normality in their fortified concrete mansions if they happen to get to them in time, but that's when it really gets good...

Imagine if you will dear reader, the grandeur, the marble tabletops, the oak paneling, the furs and paintings, the sofas and silverware, the luxury's beyond anything we could even conceive of. Now, think on how not a single one of those things matters in the slightest. Not just from a practical standpoint, but to the ignorant bastards themselves. So used to these luxuries that they no longer mean anything, so all that's changed is they have lost all freedom and hope.

Locked inside their own golden tombs, slowly going insane from boredom and withdrawal, terrified that they might be discovered and ripped from their shell like an oyster, just a mouthful in the eyes of a predator. In fact its something I do dearly wish someone would make into a film. The blurb would go something like this:

The family of a billionaire politician is forced into their luxury survival bunker when society collapses. At first they retain a certain amount of normality, but once the DVD selection has been watched and re-watched, the jigsaws completed and the drugs and alcohol consumed, they soon begin to loose their happy family demeanor, and their grip on reality itself. They slowly descend into madness, despair, incest, and eventually inhumanity, all without ever being able to accept the fact that they are primarily responsible for their predicament.

It gives me a little shiver of excitement it really does, the sweet justice of it all. Tis a dream its true, and might not play out that way at all, but it's my dream, and provides no end of comfort.

All these things combined, left to stew for a time, simmering with anger, distilling in despair, seasoned with bargaining, topped of with the last shreds of denial, eventually comes out as freshly baked acceptance, although you need to remake it every day to keep it fresh. Strange analogy I know but there's Christmas dinner being prepared in the background and it seems to be sinking in to my subconscious...       

After coming to hate Christmas over the last few years, I am fortunate enough to have found new meaning in it. Through my acceptance of our apocalyptic future, wonderful new appreciation of the present because of it, incredible fortune to be with a caring family and perhaps just getting bored with my inner Grinch. 

I may well be the first one to die as the wave of collapse reaches the shore, but so what? It was going to happen eventually, and actually, you have to admit that in a way, this is all very exiting isn't it? I mean if I had been given the choice of when to visit humanity, I would probably have chosen the most insane, hectic, Grimdark bit. So bring on the Collapse! I'm sitting on my surf board on this soon to be deserted beach, drink in hand, waiting patiently. Unless of course... it doesn't bloody happen fast enough >.<

Still cleaning up from the Christmas FEAST, but one real good thing to come out of it was all those Goose Livers!  :icon_sunny:  Our Early Bird Appetizer for the day is Goose Liver Pate, which we cheated on a bit by adding a couple of containers of Chicken Livers from the Food Superstore.  Adding the Goose fat into the recipe, you really can't tell the difference.  Still not a lot of it though, just the Chefs still awake will probably work through it before any Early Birds show up for tonight's FEAST.

Tonight we are having Take-Out Chinese.  Take-Out on the day after Christmas is NOT a NYC tradition, usually you eat leftovers from Christmas Dinner.  However, at the Diner we give all our leftovers to the Homeless, so we gotta buy MOAR food, and this saves us a lot of food prep work on recovery day.

We had a quite, smaller feast this year. Table for seven.  It was lower stress, not having to rush dinner to feed people who have to eat and run to some other family rendezvous.  The missus's brother and his wife are in Tasmania for Christmas. Her sister's family was doing something with their son's new in-laws in Houston. First grandchild finally on the way for both sets of soon-to-be-grandparents.

Only oyster dressing. No southern cornbread dressing this time. It was a great batch, though. No sweet potatoes either. Asparagus and hollandaise. My grilled tenderloins, and a smoked turkey that came precooked.

Green bean casserole, that old standby. What is Cheez Whiz, really? GMO corn, I expect. No, don't tell me. I don't want to know.

Bourbon pie. Chocolate mouse. Homemade cookies. Pinot noir and Shiner Bock.

Merry Christmas from the Fam-u-lee, as Robert Earle Keen says.

We played that song on Christmas Eve, along with every other stupid Christmas song we could find, with our tamales, which are also part of our tradition.

Up on the mountain now. It snowed heavily this afternoon, but we crashed after our trip into Salt Lake on a plane full of young Mormon families with what seemed to be dozens of babies on their laps.

I just came across this and thought that RE, among others, might appreciate it. Also Eddie, who has a intentional, long-perfected process for the preparation of Thanksgiving beef parts, reminiscent of a Japanese tea ceremony but with far tastier results.

This is a story about me and a steak. A 24-oz. A5 Wagyu ribeye steak, to be more specific. If you’re unaware of the hierarchy of beef, this is the part where I tell you that A5 wagyu is the finest quality beef in the world. The name “Wagyu” (and its cousin “Kobe”) has been co-opted to the point where you’ll see it tacked onto the description of the sliders at your local airport Chili’s. That is… (most foodie voice possible)… not real Wagyu. The true prize-winning shit comes from cattle that are raised in Japan and tended to with an ancient fastidiousness. They are not crammed into some pen in the middle of Kansas and forced to eat each other’s hooves. These cattle roam free in perfectly manicured pastures, eat a high-grain diet, drink the occasional beer, watch only the finest Kurosawa films, and in the process their flesh develops a fatty marbling that can only otherwise be found in your average Pittsburgh Steelers fan.

It goes without saying this shit is expensive, and it should only be prepared by experienced chefs who know how to cook something like this without fucking it up. The story with this particular steak is that the folks at The Takeout sent me this ribeye—which retails for a painful $250—to me because 1) They charged it to Univision because Fuck Univision, and 2) They wanted to see how I’d Morimoto the world’s most expensive steak if cost and discretion wasn’t a factor. And reader, I was more than happy to take them up on the offer. Over the course of three days, I prepared this steak five different ways and, in the process, I developed a relationship with the steak. It became my secret lover. It even caused legitimate tension between my wife and me.

But did I fuck the steak up? You’ll just have to be the judge of that for yourself.


Day 1: Smoking

This is what the steak looked like when it came in the mail:

Goddamn. Takeout editor Kevin Pang told me that when he ordered the steak online, the woman at the butcher called him within five minutes, just to warn him to not grill the steak, because that would ruin it. Little did she know that was exactly what we had in mind for this gigantic slab of meat butter. Fun fact: When you bring a piece of Wagyu to room temperature, it actually sweats out fat. So I took the steak out of package, tempered it by letting it sit out for an hour, and then I wiped a piece of bread right on the steak and ate it. It tasted like fat bread. I probably should have put more thought into how to prepare the fat bread. But no time for tiddlywinks. I had smokeboying to do.

That’s my smoker. Yes, that’s bird shit. I should probably clean it off, but it’s not like the poop got inside the smoker. Seems harmless enough. After getting the coals all hot and white, I went back to the kitchen and sliced the ribeye in half:

Loogit that beef. Wagyu is the answer to the question, “What if we massage a cow until it’s a pig?” I was very horny for this beef. My wife could see it in my eyes. I tended to this steak with more attentiveness and care than the rest of my family, and it was starkly evident. But I was more than justified. This was Wagyu, people.

I seasoned half of the steak with salt and pepper, and then put it on a foil tray so that I could preserve every last drop of fat. I had plans for that fat. I had visions of fat-infused butters, and eggs cooked in tallow, and ribeye-scented candles during the holidays. I vowed to let nothing go to waste. Then I put the tray on the grill, closed the smoker, shut down the dampers, and waited (prayed) for roughly an hour as the hickory smoke perfumed the meat, hopefully without cooking it into oblivion. The standard cooking instructions for Wagyu are to get a pan very hot, sear it on both sides for roughly a minute, and then let it rest. An hour on a smoker is probably some kind of foodie war crime. But fuck it, it wasn’t my money. Haim Saban probably chews this shit like gum between meetings.

I took the steak off the smoker, seared it on both sides, and let it rest. Letting it rest was agony. It was worse than watch food cook in a microwave. I could barely hold myself back. I stared at the clock like I was timing an Olympic swim meet. Finally, I sliced it:

There was still pink inside and that was good enough for me. I didn’t even need a knife to cut off a piece. It was just that tender, folks. I took a bite and was enveloped in pure, melting rhapsody, until my kids started yelling at each other and I realized that I was a fool to eat this with a bunch of people milling around the house at noon on a Saturday. I needed to be alone with the beef. I needed to build a fucking temple to accommodate the eating of the beef. I gave some to my wife and she politely told me it was well cooked and well seasoned, and then she spat it out into the garbage because she thought it was too heavy to eat at lunch time. I don’t know why she put it directly into the garbage when I would have gladly eaten her pre-chewed bits for her, like a baby sparrow. I was aghast she didn’t finish the bite. I was insulted on behalf of the beef. How dare you, woman.

My oldest kid buried her nose into the steak and I shooed her away because I didn’t want her to get snot all over it. Then she took a bite and said it was too greasy. I LIVE WITH PHILISTINES. At one point I flee the house and go outside with my plate and the beef, so I can hear the flavors better.

I ended up eating the entire half-steak myself, occasionally dabbing it in wasabi to cut the fattiness. Please note that Wagyu is so rich and expensive that you usually only eat it in small portions. You’re not supposed to eat it like a normal steak, but I did. I am so full now. I’m not sure I ever need to eat again. I may die. It was worth it.


Day 2: Katsu, Carpaccio

One of the hottest trends in rich asshole food right now is the Wagyu katsu sandwich, in which a high end restaurant fries up a wagyu cutlet in panko crumbs, slaps it on some bread, and then charges you $75 for it. Given that I had half a ribeye left to play with, I figured I may as well try to replicate it myself.

These are two breaded-and-fried logs of Wagyu. When I cut into the cutlets, they kind of shattered a bit and I cursed myself for not finding a Hattori Hanzo steel saber to laser through the crust to preserve its integrity. Whatever, fried beef rules. This was the best version of the wagyu that I prepared.

I know I said I’d never eat again after eating half a Wagyu ribeye the day before, but it turns out that half a ribeye only helped bloat my body to the point where I could accommodate additional foodstuff: ribs, fish, entire battleships, etc. I dunked the fried cubes in soy and, again, I was in heaven… for roughly seven seconds. Then my kids started screaming and I again yearned for a beef temple. My wife politely declined a bite. She was clearly jealous of the steak. Hateful. The steak would be the end of us, especially since I sliced it up raw that same night and served it as a carpaccio to dinner guests:

That’s raw wagyu drizzled with olive oil and lemon juice, finished off with salt and pepper. My kid tried it and didn’t like it, but I gave her a dollar for daring to eat it anyway. As for me, I was again in a fatty, beefy rapture. In raw form, the layered fat takes on the qualities of a prized fish belly. It was like magic. The wagyu could do no wrong by me. The Takeout tasked me with fucking up this piece of meat, but it turns out it’s basically impossible to fuck up because it’s such high quality. Like a rich private equity asshole breaking up media companies and ruining lives on a whim, it can do no wrong. And I know this because I subjected the remaining portion of the beef to the sternest test of all…


Day 3: Wagyu Philly Cheesesteak, Wagyu a la Trump

By now, the Wagyu had to go. There was still a quarter of the steak in the fridge and the rest of my family had had enough of me obsessing over a stupid piece of beef. They were right to be annoyed, of course. Like a cursed artifact, the Wagyu had poisoned my mind, turning me against anyone that I perceived as a threat to the wagyu. No one appreciated the Wagyu as I did. No one loved it as I did. No one was happy for us. Why couldn’t they be happy for me finding true beef love?

I was sick with beef. I had to finish the fucker off. So I made a wagyu cheesesteak for lunch, complete with sautéed onions and jalapenos:

That looks like a god awful mess, but I assure you it was tasty. And then, in a final betrayal, I took the final piece of the ribeye and cooked it into oblivion. My goal was to have it rocking on the plate, just the way the President likes it. But again, this was not an ordinary piece of meat. Turns out that when you overcook Wagyu, it doesn’t toughen up. It simply disappears. When I was done overcooking it and filling the kitchen with acrid smoke, this was all that was left of my beloved:

Yes, that’s ketchup. I’d like to tell you that this tasted bad, and that anyone who eats such a nice cut of beef this way is truly deranged. But yeah, it still tasted awesome. Tasted like the burger I’ve always wanted to eat. Oh Wagyu, is there nothing you cannot do? I am helpless to resist you. You’ve ruined my home and you’ve ruined me for ordinary steak forever. You made me into a monster. Curse your stupid sexy unctuousness.

Anyway, I give Wagyu five stars. The five is for A5!

Up here at this old lodge, which I love, that means tonight's dinner will be a nice big buffet with boiled shrimp, whole baked salmon with capers an dill sauce.....prime rib, and a choice of desserts. I made reservations for 6:30 to beat the crowd.

Maybe a couple of hundred people are here, and we will dine with friends and perhaps some strangers at big tables in the dining room, which has a fantastic view of the Wasatch range. New Year's Eve there is usually a torchlight parade down the mountain, but they are calling for the coldest weather in 40 years.

When I used to drink Sake years ago, there didn't seem to be many choices. Now you can be a Sake snob.  I don't think the stuff we used to get was exactly top shelf. It was okay hot, but cold, not so much..

Now we have a reasonably good sushi joint a couple miles from the house. They must have 20 kinds and my daughter drinks it and they serve it in a wooden box. Who knew?

It's time for something healthy and light after gorging ourselves shamelessly like Romans at a feast.

I've prepared a scrumptious baked cod dish enhanced with that most wonderful and healthy sauces, pure fresh lemon juiced adorned with slices of the lovely citrus delight.

Note those beautiful pockets in the fillet with flaky cod walls of heavenly pure North Atlantic Treasure, delicate and loaded with Nature's Omega oil health gifts. GO is not only one of the world's great chefs but a doctor of food health as well. Not that I haven't wished at rare times that I were an Ordinary man.

Probably the last thing you wanted to do on New Year's Eve was listen to me sing.  lol.  However, we have been celebrating the 12 Days of the Winter Solstice inside the Diner, and this seemed a good time to do some Karaoke over a bottle of Champagne.  I even lit up my Special 12 Candle Boat and Burned some Benjamins for this tune, done a whole lot better by Leonard Cohen.  There could be ONLY ONE choice for music for this for this rendition, Everybody Knows, my Theme Song.
