Amazingly for many reasons, the Doomstead Diner Blog & Forum has been perking along here for 7 years this February, and in celebration we are holding a 2 week long Pahhhty.  For this party, I am Chief Cook & Bottlewasher, my role on the Diner Forum.



There is of course much I could write on the progress of Collapse through 2018 as I have witnessed it from my perch on the Last Great Frontier of Alaska, the ever escalating geopolitical conflits, the ever shrinking economic pie, the various climate related disasters that escalate in size and cost every year, the social problems of increased drug use and overdoses, the mass shootings…there is no shortage of Collapse topics to deal with in any given week.



Of all of them though, I don't think here in the FSoA (Fascist States of Amerika for those of you not familiar with my acronym) there is any better example of Collapse than the election of Donaditry Trumpovetsky and the ongoing political Clown Show going on in Washington, from Goobermint Shutdowns to Border Walls to trade disputes with the Chinese to Taxation disputes to the Student Debt Time Bomb… the list goes on and on here.



At the center of all this mayhem here in the FSoA is the POTUS who got elected not by a majority of the population but by a majority of the "Electoral College", a system devised originally by the "Founding Fathers" to prevent the lower classes from running amok, and since refined with a lot of gerrymandering of districts designed to make sure the rich stay rich and the poor stay poor.  The Founding Fathers of course were the Aristocracy of the new "United States", they weren't the Indentured white servants, black slaves and certainly not the indigenous people, who were being exterminated as quick as possible.  Even to do that though, the rich have to co-opt at least some subset of the poor population to get elected, and the ones they use to do this are the poor white working class of Amerika, setting them against the other large population of poor people we have in this country, the Black, Brown, and Latino population.  The politics have morphed into politics of a racial divide rather than an economic divide setting one group against the other for their increasingly more meager slice of the great wealth pie that used to exist, but is now rapidly dwindling away with the supply of cheap fossil fuels.  In the words of Jay Gould:

So, in my Cooking Video explaining how to properly Boil an Egg, I didn't do a send up of El Trumpo himself, but rather of the folks who voted him into office.  Hope you enjoy it, along with the many other foodie vids I am currently producing for the new Diner Cooking Zone show.  You will NOT enjoy it of course if you were one of the folks who actually DID vote for Trumpty-Dumpty. lol.  Perhaps though it may encourage you not to make the same stupid mistake twice.  One can only hope.

For this Cooking Zone vid, I took it a bit more seriously, and instead of further excoriating the Trumpofsky Syndrome Sufferers I focused on the importance of having good portable equipment to cook on for SHTF Day if you have to GTFO of Dodge in a hurry due to a Wildfire, Flood or other Climate Disaster of some sort that might come to your neighborhood, well, TOMORROW!  Ya never know with these things.  Trust me, I have experience with it.  Until you have made it through a 7.0 Earthquake shaking your digs so bad you think they will come down on your head, you just do not know how suddenly such a thing can come to you.

The principles are important also if you end up falling off the economic cliff and are placed in some type of Section 8 Housing, often cheap motel rooms sometimes for whole familes.  How do you cook in such a place and keep your costs down rather than eating garbage at fast food joints?  I hope to help people in this situation with my experience with it as an OTR Trucker.  I spent many nights in "Bates Motels", and did my cooking the way I am doing it in this video.  In all probability, you will fall off the economic cliff before you get drowned by the rising ocean levels, so this is worthwhile knowledge to accumulat.

In this morning's Diner 7th Anniversary Breakfast Egg Vid, we focus on the difficulties of getting small portions for one person living alone and how to prepare small meals economically.  We also use our Section 8 cooking apparatus, the Electric Hotplate, to help Diners who have had to evacuate due to Wildfire, Flood, Earthquake or other disaster to prepare their own meals rather than eat out and spend a lot of money unnecessarily while on the road.  These are areas of my expertiese developed over my years as an OTR Trucker.  I am a DOER, not just a Talker.  I took great offense at that comment from Eddie.

OK!  The Pate is DONE!  The video is DONE!

All documented, every step in the procedure of Cooking & Canning this scrumptious, high protein and high fat meal to be ready for SHTF Day on your Prep Shelf, no refrigeration!  :icon_sunny:

As regular Diners should know, I made this video and prepared this Appetizer for the Diner 7th Anniversary Surf & Turf Dinner in response to further DISSING from the current Chief Negative Waves Diner, Eddie.

Recipe includes:

3lbs Chicken Livers
1/4 lb Hot Lousiana Sausage (10 years old)
1 Large White Onion
2 Hard Boiled Eggs
4 Tbsp Cream Cheese
4 Tbsp Butter

The Pate looks absolutely mouth watering and it is all I can do to keep from eating some of it now, but I am holding off for the 7th Anniversary Doomstead Diner Dinner.  I still have Main Dish work to do on the STEAK🥩 & the KING CRAB🦀, so actual Dinner night is probably still a few days away.  The pic at the top of the page shows 2 of the Canned Jars (of 6) as well as the reserved Pate to eat fresh with before consuming dinner.

I'll have the videos up before the Main Dinner night of course.

What is the Over-Under that I die of Botulism in 6 months after eating the first Can as Eddie claims? lol.

That risk is significant, of course.  However, I will try to hold on long enough to demonstrate my points.  :icon_sunny:

You are going to get a real demonstration of a lab gnome at work in the kitchen on this one.  Some things are like riding a bicycle.  Once you know how to do it, you never forget.

I didn't want the Diner Vegans to Starve during the 7th Anniversary Week, so I did up an all Vegan Omelet a couple of days ago.  This is a 3 part series, and the real CLIMAX is in Part 3!  You won't fucking believe it.  I don't even believe it. lol.

Video also includes a little of the history of the Great Alaska RV Adventure I took with Eddie & Mrs. Eddie last September.

The Omelet was great.  Took me 2 days to eat it though.  Sorry it is a little out of focus.  For some reason the auto-focus wasn't working right.   I can't figure out why because it's working fine now. ???  :icon_scratch:

2 days ago my Sous Chef & I did the processing and initial Canning procedure for the Diner 7th Anniversary Liver Pate Appetizer.

In this video, you will get the recipe ingradients and method for processing up the Pate, which believe you me is a lot EZier than it was when Grandma made it 50 years ago.  Fucking Food Processors are AMAZING.  I have owned a few Blenders over the years, but this is my first Food Processor.  No Kitchen should be without one.  They don't take all that much of the JUICE to run, a medium size Solar Array should do fine.

In Part 2, we will go over the procedures for Sterilization to hopefully keep from dying of Botulism.  lol.

There are layers of dissing in this claim.  First is that I can put up videos and pics of the meals prepared by other chefs, but I can't do this shit myself.  This is a disengenuous claim at best.  Eddie has had my BBQ Baby Back Ribs and Chicken Wings, and in fact assisted me in preparing the NY Style Bagels & Lox appetizer at the 2nd convocation.  He knows I know how to cook, so why would he say something like this?  He's my best friend in the whole world, but he deprecates my ability to do what I say I can do.  ???  :icon_scratch:  So this week I got my fucking crippled ass into gear to actually DO the cooking for the Diner 7th Anniversary Celebration Meals.

The second layer is the implication I am a copy/paster and don't create original material.  The fact is that BY FAR, I create the most original material for the Diner,  be it on the Blog, the Soundcloud and YouTube chanels or here inside the Forum as well.  We all copy/paste, Ediie does that as much as anyone.  It's how you take material of interest and transfer it so other Diners can quickly scan it.  There is nothing wrong with copy/pasting, although you should also create original commentary as well, at the least.

Eddie apparently thinks I was trained like his wife, who did a similar sort of work to what I did to make a living for about 15 years.  But the fact is I wasn't trained to do that job, it is just a job I took to make money.  I AM a trained Biochemist, and in this video you will find out some of my history that Eddie does not know.  You do NOT need to have a Ph.D. to be a trained Biochemist, that is complete horseshit.  This is part of Eddie's serious case of BMS, where he only respects Big Men who leap Tall Barns in a Single Bound, people with the "Dr." appelation in front of their name or people who make tons of $MONEY$ 🤑.  I am none of those things, so he sees fit to diss me whenever he can, which I am going to squash out here and now.  ;D

Feeling mean this morning?

Over the years, you've consistently cut and pasted food on the Diner that you had nothing at all to do with cooking. This recent move to video your creations just to prove me wrong is fine with me. But the story is still out on the botulism. Lets see a video next year of you eating a jar of that stuff.

You are not a biochemist. I was in honors chemistry in college too, and but I don't claim to be a chemist.

My wife also "just took a job" in a lab.....when she was 17 years old. She proceeded to get HEW/CLS certified, worked in hospital labs all the way through college, got her degree and then took a year hospital residency and got her additional certification as an MT(ASCP). She went on to become a chief technologist in a hospital, which is how she supported us when I was i dental school.  She was in that business for 25 years.

But she isn't a biochemist, and neither are you.

She's forgotten more about medicine than you'll ever know, however, and you're a rank amateur in comparison.

OK folks, it's time for the Climactic Cooking Event which occurred in Part 3 of the Vegan Omelet series.

Those of you who have been following along with the cooking videos I am sure have become aware of the great problems I have in the kitchen nowadays due to my paralysis in my right arm.  It makes doing all the stuff I have been doing very hard.

In this portion of the video though, I dug deep into the past when I was in my Cooking Prime, and miraculously I pulled it off.  For one brief shining moment, I was back at Columbia wooing the Illuminati Spawn with my cooking skills.

I am sure this video won't mean as much to you as it does to me.  It is still amazing though to see a cripple with one foot in the grave pull this off.

All done until I crack open the first can and we get to see if I die of Botulism or not.  If you can read my crippled writing on the cans, you will see they all have the canning date of 2/7/2019 on them, and 3 of them have on "Eat On" Date.  The first date is my birthday of August 31, 2019.  If I am going to die of Botulism, that seems like a good choice.   The secod date is Winter Solstice 2019, and the last Eat-On date is Summer Solstice of 2020 if I make it that far.  The other 3 cns have no eat-on date on them, no idea when I will get to them.  If I die before I do (of other causes, not Botulism), you can eat them as an Appetizer at my Funeral.

You've already seen the climactic moment of the Omelet creation in Part 3, but for the Vegans here I felt it important to see the whole recipe and creation process.  Part 2 will go up tomorrow for the complete set.

For Diners, this video is also notable because it gives more of the history of the Great Alaskan RV Adventure I took with Eddie, and even features some cheese I used on that trip for making Quesadillas!  Still good!  I bought that cheese in around Aug of 2017!

On a technical level for this one, you'll note the early vids I made were lower in quality. (this was one of the first)  I switched to one of my better cameras than the El Cheapo and we're getting much higher quality vids now.

Also, this is another meal done on the Emergency Bugout Electric Hotplate.  :)

Getting down to Feast Time, and gotta get the STEAK🥩 ready for cookin' here in the Cooking Zone of the Doomstead Diner.  In this video you can appreciate the qualities of a fine Ribeye cut of USDA Grade A Prime meat.  The marbling on this one rivals Australian Wagyu, which we probably won't see much of for a long time to come, if ever.  I made the vid before all the cattle died in the Oz Floods, otherwise I would have mentioned it in the vid.

The actual cook is still to come.  I also have prep work to do on the Surf portion of the Main Course, the Alaskan King Crab.

I have observed these rules also, and I DO eliminate a lot of the chopping, slicing, etc.  Just in that early vid, I wanted to discuss the right Knife to be use for cutting, and also my crippleness with wielding a knife these days.    When I start to add Intros and Outros to the vids, they will read in the credits:

I can see using an apparatus like that either before I cook the food or after I finish and Plate Up, but I couldn't use it during the cook.  It would be too much in the way.

So, it's Monday Morning and I am setting about the task of doing the Asparagus with Hollandaise Sauce side dish for the Surf & Turf.  Steaming the Asparagus goes well, and I pass on a few tips on how to get the texture and doneness just right.

Then I get to the Hollandaise, which also goes well except for breaking the yolk so it didn't look so pretty before going in to the sauce.  Doing real well right up until I got to adding some Cayenne Pepper at the end of it.  BOOM! AFTERSHOCK!  4.4, and close by too, about 5 miles to my southeast.  This doesn't scare me too much, although I do knock down the power to my hotplate and get ready to head for the door if it gets worse, but after about 10s it stops.  My camera however was not so relaxed, and took a dive off its perch, and I hadda finish the hollandaise without getting the finale on video.

However, I did get stills of the sauce and the asparagus with the sauce on it for the full menu Plate Up when all this gets done after the quake was over.  My Cripple Helper is due in tomorrow to assist in getting the Steak & Crab done together so those two can actually go on a plate together.

You may have noticed that I was MIA all day today, which normally I am not.  I was offline from 9:30AM to 3:45PM today with my Sous Chef and Cripple Helper doing the final COOK of the Diner 7th Anniversary Main Course of Alaska King Crab and Ribeye Steak with a Side of Asparagus with Hollandaise.  We did up a fresh batch of Asparagus/Hollandaise so I could Plate Up the whole main course together.

We did other tasks as well today, but this was the BIG ONE.  CH who doesn't have much experience as a Chef needed a good deal of instruction and help.  But I needed her good arms to pull this off.  Besides, as I said she will bring in the viewers. :)

It was a cook for the ages, again.  Once again, it has a climactic moment that is amazing.  I also did this one with not 2, but THREE cameras!  I haven't reviewed the vids yet or started editing.  This will take a while.  ::)  I will go on a marathon editing session after I rest up and tomorrow to get it done as fast as I can.  However, no way will I be able to plate up the whole meal and have it ready for Diner Consumption before Sunday, and even that is a stretch.  However, it is still Feb so still in Anniversary month for another week or so.  I'll have the Finale of this marathon up before March rolls around.

Now I gotta go review these vids!  Can't wait!

I managed to avoid setting off the Smoke Detectors for a whole month of my cooking extravaganza.  Not so on Thursday! lol.

The Diner 7th Anniversary FEAST is FINISHED, at least the cooking end of it.  I'm not holding the actual feast until the 28th though, the last day of February to cap off a full month of celebration of this auspicious occasion.  So with 3 days still to go until then, I don't want you guys to starve so I am bringing in Guest Chefs to pick up the slack.  I need a BREAK! lol.

Today we're going Vegan, with a yummy Indian Curry.  The Indians know how to do veggies.

We close our 7th Anniversary month of February 2019 with the Plate-Up of the FEAST, prepared over the last month my the Chief Cook & Bottle Washer on the Diner, me.  It's been a loooong month of slaving away in front of the stove to make all these dishes just the way *I* like them.  If you like your Steak Medium and not Rare, too bad.
