WTF is the matter with you Diners?  Exactly ONE Diner (Surly) came in with a guess on the Diner 7th Anniversary Dinner Menu.  Do you no longer have appetities?   You don't like to eat?  What?

With this post I am stating a new column, "The Cooking Zone".  Further celebration of the joys of eating & cooking food. :icon_sunny:

Another BIG DISAPPOINTMENT here in the Diners.  :(  Since you guys obviously do not care about my cooking and food threads, I will have to just go it alone here again. :P

Here's the Part 1 of the Meal, which could be only 1 choice.  RIBEYE STEAK!🥩  Actually if there were other Diners around to join me and sit down for a real dinner, it would have been a Prime Rib🥩 Roast.  I couldn't eat a whole standing rib roasts in months, and I don't have that much freezer space either.  So it is just a GORGEOUS USDA Prime Grade AAA Ribeye Steak🥩.

Will anyone get the 2nd part of the Feast correct before I have to just tell you what it is?

Good choice of Side Dishes, but I am not talking side dishes here.  This is a Main Dish of equal power and quality to a Prime Ribeye Steak.  Did you watch the video?  I basically gave away the answer in that one.

No Kewpie here either.  Pot Roast on top of a Ribeye would be Overkill on the meat end, and besides Pot Roast just can't match up to a Prime Ribeye.

In honor of the Diner 7th Anniversary, I created a new Diner Product, a Reddit Sub called the Cooking Zone.  r/Meatosaurus was too limiting, besides the fact it is a turn-off to the Vegans.  Also, I was just adding vids of other foodies who have their own Utoob channels.  I wanted a Sub to publish my own recipes and techniques.  I have enough vids now to get it started.  It's still evolving and the production  values on my vids are improving.

Besides the cooking it also features videos for cooking utensils, namely KNIVES!  :icon_sunny:  Also appropriate are vids on Permaculture food production, Gardens, Hunting & Fishing, Food Preservation methods, etc.

I named it the Cooking Zone because I learned over time that having "Doom" or "Collapse" in the title of your website is a turn-off to women.  I am downplaying the Collapse end of this over there in the effort to draw in more of the female gender.

The actual Grand Opening won't be until Next Sunday when the 12 Days of Diner Anniversary begins.  I am giving the regular Diner advanced preview time to come and join me in the Sub and help fill it out some more with Commentary & Discussion.  Let's talk FOOD!  Let's talk KNIVES!  Lets talk GARDENING!

Today I am beginning the process of Cooking & Canning Liver Pate, a favorite appetizer/breakfast item I used to buy at the Jewish Deli near my Hospital after the Lobster Shift when I was a Clinical Chemist.

I'm doing this one for a few reasons.  First, I needed a break from the main meals of Breakfast, Lunch & Dinner for the Diner 7th Anniversary meals.

More motivating than that though were some accusations made here inside the Diner that I am not a "Doer", just a Big Talker, and that if I actually did do any canning I would end up dying of Botulism, which is just a load of crap.  Jesus H. Christ, I was a fucking Biochemist!  I can't can food?  WTF?  I had to prepare glassware all the time for experiments and have them squeaky clean for the job.  This is easy stuff in comparison.

RE can cut and paste a good pantry, but he'd probably die of botulism if he tried to eat anything he actually canned himself.

I'm doing a relatively hard job (for the kitchen) of canning a combination of Butter, Cream Cheese, Chicken Livers & Onions for this demonstration.  Lotta opportunities for microbes to feast on there!

Anyhow, here's the first installment on ingredients and methods.  Hope you enjoy the series.  We'll know in 6 months if I die of Botulism or not.  If I actually live for 6 more months anyhow. LOL.

In my first video on cooking and canning Liver Pate, I showed the main ingredients I will be using to make this scrumptious pate.  But then I decided I should spice it up and fill it out some more.  Since I am already taking the time to can this concoction, I might as well do a big batch, right?  I also need to clear out my Freezer, which is stuffed to the gills.  I recalled that somewhere in that collection of Frozen Meat I still had some Hot Louisiana Sausage made by the Alaska Sausage & Seafood Company here on the Last Great  Frontier.  This also has the advantage of giving it a distinctive Alaska taste!  It's still Kosher also, because the sausage is beef sausage, not pig sausage, so Jewish Delis could sell it!  :icon_sunny:

It took some digging through the Freezer, but I FOUND it!  :o  The remarkable thing here is this package of Sausage was one of the first Food Preps I bought in...get this...2008!  LOL.  It's over a DECADE old!  Here is the PROOF.  Check out the Sell By Date on the package:

July 7, 2008!  LOL.

This sausage is pre-cooked and professionally vacuum sealed, and I am quite sure it is still good.  But if this isn't a real good test of my canning abilities, I don't know what is.

Today if I can get my energy level back up after the battle with the Grim Reper this morning, I move onto the next step of cooking up the livers and preparing everything to go in the food processor before canning.

I'll have more than one canning job to do now, probably 3 or 4.  I will date them and crack open one at a time over 6 month intervals.  Maybe I will get lucky and one of these cans of Pate will kill me from Botulism.  :icon_sunny:

Cripple Helpers BTW are better than high maintenance wives who want you to make tons of money and have a big McMansion and so forth.  They always have a smile and do what you ask of them agreeably.  Relatively speaking, they come in at a reasonable rate for the work you want to get done.  They are totally renewable, you don't have to divorce them if things aren't going well in the marriage.  I am only sorry now I did not discover Cripple Helpers before this!  :icon_sunny:

Various tasks are performed throughout the week. U.C. picks up the tab.
She also gets 5 hots a week from meals on wheels.

No.  She's currently getting her certificate as a Phlebotomist and then plans to get an EMT certificate so she can work in ERs.  She wants to go on for her doctorate and become a Trauma Surgeon.  She has to work her way through it though, she doesn't come from money.

A day late with a lot of exhausting waiting around for the delivery, but on the upside to that they waived the delivery fee so I saved $80.  :icon_sunny:

It is Unboxed and installed in its new home in the Cooking Zone of the Doomstead Diner!

It fits the spot much better than I though it would.  The Kitchen is a bit of a mess now because I had to move stuff out of the way for them to get it in place.  My CH is in tomorrow, so we will reorganize the kitchen and also clean and reorganize my fridge.

The freezer is almost the same height as the countertop where I video the Cooking Zone preparation vids and the Electric Hotplate Bugout preparation vids, so gives me additional workspace which will be very helpful.

The interior is positively CAVERNOUS.  For just myself, I could store enough meat & fish in there for 5 years.   But when SHTF day comes, I will be giving it away to my Cripple Helpers and friends here in my Community.  So it won't last that long.

I got video of the delivery and installation which I will publish at a later date with an article on food prepping and preservation.  It doesn't draw that much juice, you could easily power it with a small-medium size solar PV array.

I also have another delivery due today from smile.amazon.com.  So I can't go to sleep yet.  I am fucking exhausted.  These days are rough on cripples.

I'm way ahead of you.  I ordered a large Sushi Board which should get here any day.  I don't want to glue anything to the top, it would make it heavier to open.  I also have an Xtra Large cutting board I haven't used much on the show.  My small boards are enough for me.

After 2 days of hard work, my new 7 cu ft chest freezer is now filled with preps ready for SHTF Day!  :icon_sunny:

It's a good thing I bought the 7 cu ft model, I never could have done this with a smaller freezer.  As it was, the dimensions worked out perfectly for some organizational equipment I already had, namely Folding Wire and Plastic boxes.  These containers fold flat when not using them.  I bought the wire ones to use on my 2-wheel Ewz as Paniers, they're made by Bell for Bicycles.

As it turns out, 2 of these fit perfectly into the freezer to organize your goodies.  You definitely do NOT want to just drop your food in, particularly at the bottom of the freezer.  You can't reach it (at least I can't) plus it would get so buried you'll never see it again unless you empty the whole freezer.

This level has my real long term survival meats.  They are all commercially vacuum sealed and salted and/or smoked meats like Hard Salami, Ham, Sausage,Smoked Turkey Breast, Bologna, Bratwurst, etc.  This stuff actually lasts fine without refrigeration, much less freezing.  However, it should maintain flavor better and also safer from critters.  It's at the far bottom because I wouldn't use it until all the fresh meat is gone.

Here is another shot with the top basket slid over so you can see what is in the basket below it.  These baskets come with the freezer.

The side containers have stuff like some frozen foods, bacon, butter, frozen juices, etc.  Stuff I more commonly use in the BAU world.

The 2nd Level up utilizes a Plastic folding box I picked up ON SALE at Home Depot when I bought the Freezer.  2 for $9! It has larger packages of fresh meats I couldn't resist buying because they were ON SALE at 3 Bears.  A whole free range chicken, family pack of T-bone steaks, etc.

The 3rd level up is 2 more wire baskets, which I am still working on organizing.  They are filling mainly with single portions of fresh meats, ribeye steaks, Fillet Mignon, Salmon Fillet,etc.  This is stuff I SHOULD be eating regularly, but don't do that as fast as I buy them, so they accumulate on me.

HTF I jammed all this stuff into my fridge freezer I have no idea.  There is STILL stuff left in the fridge freezer too!  At least now though I have room for some ice trays.  ::)

The 3rd Tier is DONE!  The Chest Freezer is now essentially full.  It actually can fit one more wire basket, but if I put that in then I can't slide the right-side basket to the middle to access what is underneath without removing a basket.  How I fit all this shit into a typical Side-by-Side combo Fridge-Freezer is like clowns stuffed in a Volkswagen.

the old freezer is now sufficiently emptied I can use that as my main daily freezer for leftovers, some microwaveble foods, making ice for my Cocktails, etc.

I have sworn to myself I will not buy another piece of meat until I have at least half emptied this freezer, either by eating it or giving it away.

This Sunday Brunch article is in a new format for me, it begins with a brief synopsis of significant Collapse newz events which have occured over the last week in a few different areas.  My partner Surly uses this format in his "Week in Doom" articles, and it is a very successful format, although he writes in greater length and more detail in his analysis than I will be doing in this Newzwire.  Normally, I could write a full Blog on any one of these topics, but I am doing the newzwire instead here, for reasons which will become clear after you finish the latest synopsis of Doom Stories.

Manafort Lies, Loses Plea Deal



Image result for manafort Pauly isn't looking too Dapper these days, is he?  Having been found Guilty of lying to the FBI, he is now facing 17 to 24 years in a Federal Penitentiary.  It couldn't have happened to a nicer guy.  One of his associates was quoted as saying Pauly was going to die in prison.  The worst part of this story is that the taxpayers will be footing the bill for Pauly's room & board until he does actually buy his Ticket to the Great Beyond, or maybe Pulls his own Plug.  The best part of the story is that the Noose is pulling tighter around the fat neck of Donalditry Trumpovetsky.

Besides that, the Demodopes are bound to introduce bills in CONgress to prevent His Trumpness from unilaterally repurposing funds allocated by congress, which under the articles of the Constitution has the Power of the Purse.  Many Repugnants side with the Demodopes on this issue, fearing the Blowback that comes down the line when (not if) a Demodope gets elected as POTUS.  How about a National Emergency declared to try to put a stop to Gun Violence?  You can make a better case for this as an emergency than a few Wetbacks crossing the border, which is actually way down from its Peak Years in the early 10s.

Who the fuck would work for this asshole?  He doesn't listen to anybody, he doesn't read any of the briefings, he only knows what Sean Hannity on Faux Newz tells him.  Then his governing amounts to firing off a dozen Tweets every morning and barking orders to all his underlings.  He a self professed  "Dealmaker" who can't make a fucking deal!  If he went on the Let's Make a Deal show with Monte Hall, he would be sure to pick the wrong door.

Airbus Dumps the A360



A huge flying White Elephant goes to its grave after just 11 years in production, following closely on the heels of the recent cancellation of the Boeing 747.  The 747 however at least lasted since the 70s when it was first produced.  The failure was baked in the cake from the beginning economically, even forgetting about Peak Oil.



There simply aren't enough people flying to any given destination often enough to pack an A380 full of passengers, which you have to do to show any kind of fake profit in that industry, which like the automotive  industry has been debt financed and gone through multiple bankruptcies and Mergers & Acquisitions over the years.  Anybody else here remember PanAm and TWA?  I actually flew on PanAm several times back in the 60s, to and from Brasil for visits home when we lived there.  I got off the #7 Flushing line of the NYC Subway innumerable times at Grand Central Station, which the PanAm building was built over.  Driving a car on Park Avenue in NYC, you actually drive THROUGH the PanAm building!  That building is also a huge White Elephant, another relic to be of the Age of Industrialization.

Sears back on Life Support, "Fast Eddie" Lampert resigns as CEO



Image result for eddie lampert Sears besides being a victim of the shift from Brick & Mortar retailing to online shopping was also gutted by Fast Eddie as a Leveraged Buy Out, and in its latter years was more of a REIT than a retail establishment.  Sears has been on the road to Bankruptcy for the last decade, but is one of those "too big too fail" entities so the banksters kept lending more money despite the fact the company never showed a profit in the whole time.



In this latest attempt to keep this corpse breathing, Fast Eddie proposed to "save" Sears and "save" Jobs by buying the performing assets of what is left of the company and offloading its liabilities, namely its Pension Obligations to Da Goobermint Pension Guarantee Corporation.  Another great example of  "Privatize the Profits, Socialize the Losses".



The latest chapter in this saga has Fast Eddie resigning as CEO, and Sears still being kept alive.



 



Climate Change



 



500,000 Cattle Drown in Queensland Floods



Image result for 500000 cattle die in australia flood More Pigs & Chickens may have died in the North Carolina Floods, but this was a truly devastating blow to the Oz Cattle Industry.  Beef is a huge export for Oz, sending Australian Wagyu to places like Singapore and Hong Kong where rich Traders can afford that quality of beef with pocket change.  Not such a huge export market to Japan, where they raise their own variety of Wagyu, which is even fattier than the Australian Wagyu.



These very same cattle were kept alive the last couple of years of drought by hand feeding them, and many if not most of these ranchers are already in deep debt.  Replacing these cows which cost $2000 each is just about unthinkable, particularly with the risks which Climate Change are bringing to that neighborhood.  We are witnessing the end of the era of copius consumption of beef, so if you are a Meatosaurus, get it now while you still can.



 



1500 Dairy Cows Die in Washington Snowstorm



Image result for 1500 cows die in WA snowstorm Not as huge in numbers, but equally devastating to the Dairy industry in Washington, 1500 Dairy Cows died in the recent Snowtorm they had there.  This also is bad newz for Alaska, since we get just about all our Dairy products plus most of the rest of our produce barged up here from Washington, or from Mexico.  There was a Dairy here in Alaska when I first moved here a decade ago, but it closed about 2 years after I arrived.  I suspect the price of milk, butter & cheese will be going up around here.



The only crops that grow well around here are tubers like Carrots and Potatoes, and also Cabbage does pretty good.  Just about everything else has to be grown in a hothouse.  One can only hope that when SHTF Day arrives, we'll be able to maintain some form of trade with WA, otherwise we'll be back to a diet of mostly Fish like the Inuit and Aleut of the old days.  Fortunately, I love Fish. πŸ™‚



 



An "Atmospheric River" flows over SoCal



Image result for atmospheric river california  Fresh off their years of drought and this summer's record breaking Wildfire season, SoCal is now experiencing a train of torrential rain known as an "Atmospheric River" amongst the Meteorologists Weathermen.  What this means to a mountainous neighborhood recently denuded of trees is mudslides, rock slides and avalanches, along with a new round of "Mandatory Evacuations" for people stupid enough to still be lving in that neighborhood.  About the only place with a large population I can think of that is in a worse position as far as Climate Change is concerned is Saudi Arabia, now up to around 30M Homo Saps, up from around 1M at the beginning of the 20th Century.  Most of them are not Sheiks who will take their Private Jets and GTFO of Dodge when things get bad, they are Foreign Workers paid slave wages who will be left to twist in the wind.  In all likelihood though, the neighborhood will break out into internecine warfare before that day comes.



Internecine warfare in CA is not on the horizon at the moment, although the battle between the Goobernator of CA and Trumpini in the courts over the Wall boondoggle is just beginning.  That should provide even more Mud Slides than an Atmospheric River.

A new Postal Shoot-em-Up in Aurora, Illinois



Image result for aurora illinois shooter We got a new Postal Event in Aurora, Illinois this week, this time by a disgruntled worker who was getting Pink Slipped.  Have we heard that story before?  In this case, the shooter knew he was getting the axe, and came prepared to take revenge on the spot .on his boss and whoever else in the place he had a beef with.



It also turns out he was an ex-Felon who managed to purchase the gun legally, in IL no less!  Also notable in this case is that apparently the gun was equipped with a Laser, which makes accurate shooting a whole lot EZier for anybody.  No doubt now some idiot will say "Guns don't Kill People, Lasers do" and there will be a demand to ban Lasers, which is preposterous because you can duct tape a laser pointer to any gun at all.



Is this a manifestation of collapse since we have been having Postal Events going back into the mysts of time?  It is in terms of its frequency of occurence.  The more people who are losing their jobs and feel hopeless, the more likely it becomes that one of them will decide to lash out.  So expect to see more of these events as Collapse presses onward.



 



OK, so now let's get to the reason I just did a brief overview rather than my usual in-depth analysis of any given topic for this week in collapse.  As regular readers of the Doomstead Diner know, this February marks the 7th Anniversary of the Doomstead Diner Blog & Forum.  In Celebration of that Anniversary, I decided to cook up a FEAST worthy of such an Auspicious Occasion.   I never expected the Diner would still be covering Collapse after 7 years, most blogs go around 4-6 years before the blogger suffers burnout or just runs out of new things to say.  In the last couple of years, I didn't think I would even live long enough to see the 7th Anniversary of the Diner.  At least not from this side of the Great Divide.



Image result for 4 horsemen of the apocalypse So, I have been engaged for the last few weeks practically full time preparing, cooking and videoing  the various dishes  I have chosen for the "4 Courses of Apocalypse" Diner 7th Anniversary Dinner, which actually still is not finished.  So there is still time to join us Inside the Diner to enjoy the full meal with us and discuss Collapse around the dinner table.  Definitely better than the conversation you will get at Thanksgiving Dinner with your Climate Denying family or the July 4th BBQ with obese friends & relatives discussing MLB Batting Averages and Strikeouts, and betting on who will make it to the World Series.



Producing the videos for this Celebration Dinner gave me a NEW Brainstorm!  I would create a NEW product for the Diner, a Cooking Show where the chief subject of conversation while cooking would be some of my favorite collapse related issues, Homelessness, Food Pricing & SNAP Cards, Emergency Preparedness, Prepping, Bugouts, Food Transportation & JIT Delivery, along with many other topics as well.  In a sense, it is a visual version of the Audio-only Rants I used to do on the Diner Soundcloud Channel.  The internet has over the time period we have been running the Diner morphed from mainly a Reading medium to a Visual one as Bandwidth and speeds have increased.

So, if you didn't guess by now from the video in the Header or the Feature Photo, the main topic here for today  is the new Cooking Zone of the Doomstead Diner, starring as Chief Cook & Bottlewasher the Crippled Cook of Collapse, RE. πŸ™‚



The Cooking Zone is a work in progress, I am not a professional photographer or videographer.  The closest I came to that was as the Photography Editor for the Columbia Spectator back in my College years.  For the rest of my life, I was just an amateur hobbyist.  I never did any videography until the digital cameras came out when I started making short videos of skills I was teaching my gymmies and how to teach and spot those skills.  No editing, and the vids were max about 2-3 minutes long.  This is a much more complex undertaking, requiring I learn a bunch of new skills and also invent some new ways of doing things that I know the Pros do, but I don't have the money for the equipment they use to do those tricks.



I made some mistakes with the first season of videos I did, the main one being of all the cameras I own, I chose to use the worst, oldest and cheapest of them, simply because it was the easiest for me.  Sadly, that camera which I fondly called "El Cheapo" which has been a Workhorse for 5 years since the 1st Diner Convocation in Texas in 2014 has numerous issues now, among them a faulty auto-focus, a faulty automatic lens cover, a faulty zoom switch and a faulty mode selector.  Time for Retirement for that camera!  So the new Season of the Cooking Zone will be using two of my better cameras, a JVC Sports Vidcam and a Sony I have named the Pocket Powerhouse.  It's one of Sony's line of pocketable cameras that has many of the features of DSLR Camera, along with an AMAZING 30:1 Optical Zoom!  The new season of the Cooking Zone is already looking a whole lot more Professional than the early trials.






The new Season also features an upgrade to the set I use  for Food Preparation, that is what the Header video is about if you didn't watch it.  The new set is more functional and looks more professional, and enables me to get some camera angles I couldn't get before.  You won't miss any details of the techniques used in the cook and the ingredients used in the recipes with the new set.



If you enjoyed the Rants I used to do on Soundcloud, you should enjoy the new Cooking Zone of the Doomstead Diner.  It's NOT just about cooking and recipes, that just serves as a backdrop for me to discuss issues of collapse I find important.  The recipes are real though, the techniques are real and the food is GOOD!  Although unfortunately I can't eat very much of what I cook due to a depressed appetite as one of my symptoms.  Still, I always do eat at least a few bites of whatever it is I cook up on the show to see how it tastes.



As a Bonus here, I leave you with a Trailer for the first Episode of the new Season, the Trucker Basic Breakfast.  Regular Diners know that I was an OTR Trucker as one of my many careers over the 40 year span of my working life before I became a Cripple, and the techniques I developed living in my Freightliner for 7 years are very handy ones to know if you ever have to do a Bugout from your Doomstead due to such disasters as Floods, Wildfires or Earthquakes.  We actually had a major earthquake up here on the Last Great Frontier a couple of months ago which you probably read about it.  I have been through many earthquakes over the decade since I moved here, but none of them ever really scared me.  This was a totally different experience, and it is TERRIFYING.  I moved faster than I have in a couple of years fueled on Adrenaline to get out from under my digs, which I seriously thought would collapse on my head.

You want your Bugout Machine packed and ready to go at a moment's notice, when the local Firefighters knock on your door at 3AM and tell you to EVACUATE NOW!  You don't want to be Homeless and without resources with just the clothes on your back.  Although losing your home and perhaps your life is bad, it happens pretty quick in such a situation.  Homelessness is a form of Slow Death, and has been one of my greatest fears since I became a Cripple and lost all source of income for 7 months before I finally was approved for SSI.  I was one of the "lucky ones" also, only 40% of Disability applicant for SSI are approved on the first try, which takes at least 5 months.  If you are looking at a second try another 40% are approved after over a year, but 20% are left to twist in the wind in perpetuity.  The only reason I was able to survive this period was because I had a Nest Egg, enough money to carry me through with no income for 7 months.  How many Amerikans have enough money to last for 7 months with no income?  Answer, not many.  Most Amerikans don't even have a month's worth of bills in savings to carry them through.  They don't make enough money to have savings, in fact they generally go deeper in debt every month they are alive.  Even with my Nest Egg though, there were many nights during that 7 months I had Nightmares that I would end up as a Homeless Cripple Freezing to Death on the Streets of Palmer Alaska © .

In this snippet, you will get a sampling of a Day in the Life of a Cripple and his helper organizing up the Diner Kitchen for a good set for future videos.  I seek to improve on this set constantly, as you may have noticed if you watched the series from th beginning.

Cripple Helpers BTW are better than high maintenance wives who want you to make tons of money and have a big McMansion and so forth.  They always have a smile and do what you ask of them agreeably.  Relatively speaking, they come in at a reasonable rate for the work you want to get done.  They are totally renewable, you don't have to divorce them if things aren't going well in the marriage.  I am only sorry now I did not discover Cripple Helpers before this!  :icon_sunny:

The Cooking Zone idea actually predates when I decided to cook up for real the Diner 7th Anniversary FEAST, rather than simply copy/pasting it.  It started with discussions of Meat Eating versus Veganism, and I started watching cooking shows on UToob devoted to Meat cooking and eating. I stood up a Reddit channel called r/Meatosaurus to record some of my favorite episodes from various web cooking shows.  Here are samples from 3 of them I subscribe to:

They all have a few things in common:

1- Very high production values.  They are either being done by one professional videographer and editor or in the case of BBQ Pit Boys I think its a team of them.

2-  They are all highly formulaic.  Every episode follows the same formula, whatever it is.  Almazan Kitchen and Travel Thirsty do all silent, no talking at all.  BBQ Pit Boys does a voce over narration done after the video has been put together.

3-They all have Millions of subscribers.  These channels MAKE MONEY.

They have differences too.  In the case of BBQ Pit Boys, it's a bunch of old Southern Redneck who get together to do these massive BBQs.  I still can't believe just 9 of them eat all the stuff they will cook up in one of these shows.  They must have their wives and families somewhere off camera.

In the case of Almazan Kitchen, the guy plays the Primitivist and does many of the shows cooking in the great outdoors over an open flame.  He also sells and displays his Signature Knife.  He collects wild herbs in some really gorgeous natural setting with a running stream and so forth.

In the case of Travel Thirsty, you never see him and he doesn't do the cooking, he visits restaurants and records his meals.  Often very expensive meals, lol.

So, after studying these shows, I determined I needed a Formula also, and the first thing I developed was my signature Hand Talking while doing the closeup shots of the cooking. The next one was the cooking on electric Cooking gear for Bugouts.  I did not appear in any of the first videos I did, just my hand waving around. lol.

In contrast to all 3 of the shows above, I talk live during the cooking with no script.  I talk about the cooking of course, but also about the subjects of Collapse.

If you watched the 2nd video in today's article which is a Trailer for the 1st episode of the new season, you will see another innovation besides using better cameras and getting a new set.  Can you identify what it is?  Here is the vid:

I am running not one but TWO cameras simultaneously, one to get a full body shot of me cooking, the other one focused on closeups of the food.  Trust me, this is not EZ to do when you are a cripple shuffling around to get both cameras ready, get them rolling then get your crippled ass in the right position and be ready to cook and rant at the same time.  This is all done solo, my CHs are not around to help me on this one.  In this production it led to a couple of minor disasters when a camera chose to shut itself off at just the WRONG time, in obedience to Murphy's Law and I had to do a second take.  But overall the various segments came out quite good.  Now I have a lot of work to do stitching them all together, and I am no pro editor like Surly.

NOBODY else does this, running two cameras with different views.  It's one of the innovations that will make the Cooking Zone unique.  I have another one also which I will demonstrate here inside the Diner in the next day or two.  Have a guess as to what that innovation is.  ;D  Hint:  What Scene in Children of Men is most famous and what is it most famous for?  Anyone who guesses this one right wins a Diner Kewpie Doll.  ;D

Still a work in progress and I'm teaching myself new stuff all the time, so I hope to keep improving on the show.  We'll see how it goes.

I made a new one egg Vegan Omelet this morning (well, more of a Midnight Munchy, but it was morning in the land of Brexit!).  This one isn't just plain cheese, its got Asparagus, Mushrooms, Onions, Garlic and Cheese, of course.

I'm still using the new format of both a full body shot as well as the food cooking view, but I am not trying to do them at the same time.  It's simply too much to do for one person to run 2 cameras, cook and chat all at the same time.  I'll reserve those exercises for when I have one of my CHs here to operate and monitor the cameras.

The view of the food cooking is simply FABULOUS with the better cameras.  Great definition on the Asparagus and Mushrooms sizzling in the pan!  :icon_sunny:

I did run into another glitch right at the end, the memory card ran out just as I was finishing up the Omelet.  I lost about the last minute of video.  But 95% of the cook got in there.

I'm going to need a bigger memory card!  lol

Collapse topics for today include reducing the amount of waste you create by re-using what are considered "disposable" tools and the dependence on electricity for various types of apparatus.

Over a year?  That's INSANE!  How much better could it taste?  ???  :icon_scratch:

I let my STEAK🥩 for the Diner 7th Anniversary FEAST age for around 2 weeks, and it looks good to me.  No idea how it tastes yet though.

Alaska in the Winter is probably the best place on earth to dry age beef.  The Humidity is always naturally low, you don't need all the blocks of Himalayan Salt.

I can't help sharing the finished product here with the Diners before the article comes out.  Absolutely the best Quiche I have ever made,or ever tasted in fact.  I was able to eat a FULL SLICE at one sitting.  That is amazing for me.  KH was over today to help get the new computer situated in the office space, she ate a full slice and wanted a couple more to bring home to her housemates.  So the first one is already almost gone!  I'm putting the 2nd one in the new deep freezer for later consumption.

This is not as weird as it sounds.  In the aftermath of WWII, many Japanese with money left Japan and set up shop in Brazil, much as the Nazis set up shop in Argentina.  Japanese-Brazilian Fusion Food is very common, many restaurrants specialize in it.  In fact, after he retired from the Bankstering Biz, Dad the Pigman ran such a restaurant in Rio.

Today's Lunch features homemade Ahi Tuna and Salmon Sashimi, Feijon (Rice & Beans) and Fresh Fruit.  Feijon should not be confused with Feijoada, which has a lot more in it than just Rice & Beans.  I'm planning to do a Feijoada sometime in the near future for Dinner.

If you come from the Big Apple or Bean Town, you know there is no greater holiday with a greater tradition than St. Paddy's Day.  Folloiwng closely on the heels of the Ides of March, you can consider it a celebration of the fact you got through that one without getting stabbed in the back.  Of course, to really enjoy St. Paddy's Day, you have to be a bit fond of the Sauce.  lol.  The Drinking starts at Breakfast and doesn't stop for the whole day.  Somewhere in there you need to get some solid food down into your gut, or you will pass out too soon.  So for this St. Pat's Day, what else could I possibly cook up other than Corned Beef & Cabbage, the traditional food nourishment to accompany the Pints of Guiness Stout and the shots of Jameson's Irish Whisky?



Image result for pint of Guinness Stout Above you'll find the complete cooking instructions and recipe for the most scrumptious and delicious Corned Beef & Cabbage you will ever eat.  Done this year for the first time with my NEW Gourmia Insta-Pot!  I went into this with some trepidation due to the fact I had never tried Pressure Cooking a Brisket before.  Smoked, yes, Slow Cooked, yes.  Pressure Cooked, no.  As it turns out, this has to be the BEST way to prepare this dish, for both ease and simplicity.  About the only people who could not handle this cooking job are the supporters of Donalditry Trumpovetsky.  If you can't figure out how to Boil or Scramble an Egg, you're going to be out of your depth with doing this meal preparation.  For everyone else though, it's well within reach, and your guest will thank you, right before they heave it all up on your new Persian Rug. lol.



You might wonder why I am publishing this today rather than tomorrow, which is the actual St. Paddy'Day and also my regular Sunday Brunch article?  That's because I have planned for tomorrow an even BIGGER production including a Special Edition of the Collapse Morning Wake-Up Call and another new Cooking Zone recipe for an entirely NEW Soup never before cooked up on Planet Earth, Alaskan Collapse Wedding Soup!  Assuming of course I can get all the editing done by tomorrow morning.  Real crush for me on that deadline, and I have already been umbilically tied to the computer for the last 2 days, when not actually cooking, or of course sleeping or excreting.  lol.

We've been doing quite a few "Premium Meals" lately in the Cooking Zone, our Diner 7th Anniversary FEAST which featured Alaskan King Crab & Ribeye Steak for instance, or the SalmonTeriyaki Bake or the Corned Beef & Cabbage for St. Paddy's Day.  Actually the last two are within SNAP Card prices when you factor in how many days you can eat the leftovers.  However, for today's episode of the Cooking Zone, we are going "Back to Basics" with meals well within the SNAP Card Budget of $5/day or $1.67/meal for a 3-meal Day.  Criteria a meal must meet to fit the SNAP Card Menu are:



1- It must come in under the Budget for the meal.



2- You must be able to cook it on prtable cooking apparatus you could use in a Bugout situation where you have to GTFO of Daodge in a hurry.  Think Wildfires, Floods or Earthquakes.  Don't worry too much about the rising Oceans swallowing you up, that won't happen so fast.



3-  The meal should be Nutritious with no JUNK FOOD!



4-  The meal should be DELICIOUS and help you forget your troubles while you enjoy eating it.



I did the first video in the middle of the week, then I decided to do another one which I just did a still pic of, then last night I got a bug up my butt to do another vid.  That's why this article is going up so late this morning.

An extra special TREAT for the Diners for Saturday Brunch today as the Spring weather comes here to the Last Great Frontier, a NEW and DELICIOUS recipe for that great Alaska Collapse Food, SALMON!  In this invention, I combined the flavors of the Carribean and the flavors of the North East during Maple Sap Tapping season.  The combination turned out to be exceptionally SCRUMPTIOUS!



Salmon is for Alaska the perfect Collapse food, one you can acquire without the need for money and without JIT delivery to your local Food Superstore.  The recipe though has some deficiencies in this regard, as Citrus fruits likely will not be shipped in here after SHTF Day arrives on the Last Great Frontier.  For the Maple Syrup though, you could easily substitute Birch Syrup which we tap right here nearby where I live.



The cook also is done with our Collapse Bugout Cooking Apparatus, this time the Electric Toaster Oven.  Price was also kept down to near the SNAP Card Budget, although it does slightly exceed it so this one qualifies as a low-end Premium Meal, not a typical day's meal when you are working on a tight food budget.



In other newz, since this cook I have been Upgrading the Cooking Zone Kitchen to be more of a Professional Utoob Chef's arrangement, with all my tools at easy arms reach and easily found when needed when you discover you forgot to find a tool before you started the camera running.  lol.  Here's the curent state of the refit:









This recent upgrade follows the initial upgrade I did to have a better Video set for production, cmera angles and lighting.  Here's the Tour of the Cooking Zone right after the initial upgrade was finished a few months ago:






As you can see, many cooking tools have now magically appeared on hooks surrounding my Food Prep area, which also doubles as my Consumption Location for EATING πŸ˜‹ the food after I cook it up!   Besides installing all those hooks and auxiliary shelves, I also dug out of my preps in long term storage my nice Nipponese-style porcelain dishware to consume from, to give it all that classy, restaurant look to it. πŸ™‚  Unfortunately, the largest plates in the set all broke I guess in the last move here, but they were too big anyhow.



The Food Prep and Consumption area also serves as the set for cooking on the Bugout apparatus of the Electic Hotplate, which you can see sitting on the shelf ready for action, which is often.  In fact most of my recipes are cooked here rather than on the gas stove to show they can be done with just this kind of apparatus and nothing else.

Sometimes the ongoing Political Kabuki Theater & Clown Show we are immersed in transitions from just being mildly amusing to downright HILARIOUS.  Such was the case a few days ago when fresh off my chat with Jason Heppenstall of 22 Billion Energy Slaves, I was cooking Breakfast and simultaneously listeing LIVE to "debate" ongoing in Parliament following Theresa the Terrible's (TtT) latest defeat on her latest call for a Vote on her Brexit non-Plan.  Theresa has been living in Cricket-Land too long and obviously does not know the rule that 3 Strikes and YOU'RE OUT!  No more innings for Theresa!

TtT is not the only Clown operating on the political scene in Brit-ville though, they have enough Clowns to fill the entire Bench, and fortunately for those of us cooking breakfast at 4AM Alaska Time, this makes for a VERY entertaining backdrop for making an Omelet!  All brought to me through the magic of microprocessors, fiber optic cable and absolute GOBS of energy being consumed by Cisco Routers all over the world to get these juicy packets of information to my BIG SCREEN OLED monitor and amplified Sound Bar with Sub-Woofer. πŸ™‚



Image result for alexandria ocasio-cortez dancing For those of us living on this side of the pond, even those at the far western end on the Bering Sea like me, this is a welcome respite from our own Political Soap Operas, including but not limited to Trumpovetsky threatening to close the border with Mejico, handing out Security Clearances to anyone who had regular Chats with Ruskie Intelligence or could Fog a Mirror, Uncle Joe Biden Groping his way around every set of Ta-Tas that ever appeared on a Podium with him in the last 50 years of stumping and cutting deals with his Corporate Masters, all while AoC shakes her Bodacious set of Ta-Tas around to get everyone to pay attention to the problem of Gender inequality.  This being more important of course than the fact everybody is going fucking broke these days!



Anyhow, I don't talk too much in this Breakfast Recipe Video (for a change!), other than to give a few pointers along the way for making a good Mushroom Omelet and cooking cheap and EZ sausage patties and hashbrowns and set up the cook at the beginning.  The rest of the time you get to listen right along with me to a bunch of Prep School Jokers bloviating and trying to "solve" a problem in the next 2 weeks they have been completely unable to make progress on in the last 3 years since the Limeys voted to exit the Hotel California Europa, where you can Check Out but you can Never Leave.  It should get very interesting as we get closer to this latest of constantly moving backward deadlines.

The weather finally broke here on the Last Great Frontier of Alaska, and Spring finally forced Winter to release his Icy Grip on our beautiful and sparsely populated state.  Most of the snow and ice has melted off now (at last!), and this week we had our first day where it was truly comfortable for me to go outside, a balmy 39F, as well as reasonably safe with no ice on my Cripple Ramp out onto the back porch to slip on, fall, and then lie freezing to death as a helpless cripple.  For me, this meant only one thing, it was time for the 1st BBQ of the season!  After a full winter of all indoor cooking, especially with the new culinary adventure of the Cooking Zone, I was MORE than ready for a nice JUICY ribeye done on the grill in the Great Outdoors.  Of course, my back porch is not exactly the Bush of Alaska, but for the 1st BBQ of the season, it's perfectly serviceable.



Image result for 154-04 beech ave flushing 11355 I resolved also to do this BBQ in the TRADITIONAL fashion (traditional for me).  That meant doing the BBQ the same way I did them when I moved back to the FSoA at the age of 10 after living in Brazil, and did my first BBQ in back of MY HOUSE, the house I lived in with my mom and my sister until I went off to College at Columbia.  It didn't have much of a backyard, in fact not much bigger than the one I have now behind my humble digs here in Palmer, Alaska.



Traditional meant the meal would consist of the STEAK with SAUTEED MUSHROOMS IN GARLIC and a BAKED POTATO loaded with BUTTER & SOUR CREAM.  I stuck to this menu religiously, no variation there.  Also no variation in the Cooking Method, none of the fancy newfangled methods I have been experimenting with lately for the Cooking Zone show like Sous Vide or Instapot Pressure Cooking.  The Instapot was GREAT with the Corned Beef & Cabbage I made for St. Paddy's Day this year, but for a Ribeye Steak it just wouldn't do.  Ribeye is a very tender cut of meat best served (IMHO) RARE, while Brisket used for Corned Beef is quite tough unless you cook it a long time or under pressure, and is Well Done at the finish.  For those of you who missed it, here is the Cook on the Great St. Paddy's Day 2019 Corned Beef & Cabbage:






This Corned Beef turned out so good I ate all 2.5 lbs of the Brisket in 3 days, for nearly a pound of BEEF every day.  For a person with a normal appetite that is a LOT, for me with my depressed appetite since the accident it is unheard of.  I wasso enthused about it I bought 3 MOAR Briskets which I dropped in the Freezer to eat on some other occasions BESIDES just once a year on St. Paddy's Day.



For the Ribeye though, I stuck mostly to the Traditional method, with a couple of slight variations.



The first was that this was not a brand spanking new Ribeye straight from the Chicago Feed Lots, It was a Ribeye from my Preps, vacuum sealed and in the Freezer for at least the last 5 years, since I haven't done any new Vacuum Sealing of meat since I moved into the new digs around 4 years ago, and this predates that move by at least a year although I neglected to date my prep food packages at that time.  So this meal also became a test of just how long a frozen & vaccum sealed piece of meat would last for after SHTF Day arrives, assuming of course you have enough JUICE to keep your freezer running.  A medium size Solar Array off grid will be enough for this task though.



The 2nd variation from tradition I will leave a Mystery, you will need to watch the video to find out what that one is.  If you have been following the Cooking Zone and the SNAP Card Gourmet though, you probably won't be too surprised to find out what it is.



Finally,why do I call this "The Holy Meal"?  Well, that's because if I do get sufficient warning of my final meeting with the Grim Reaper bearing my First Class Ticket to the Great Beyond, this is the meal I will have for my LAST SUPPER.  It holds so much meaning for me, my history with cooking food and all the places I made this meal stick in my mind, from backyards in the many places I lived, to Truckstop parking lots where I pulled my Hibachi out of my Freightliner to make a BBQ, out to the Bush of Alaska before I was transformed into a Cripple.  Besides, it tastes GREAT!

This may be my Favorite Recipe for serving up a great meal cheap on a SNAP Card Budget.  Full of Flavor and you can cook up the whole meal on a one-burner Bugout Electric Hot Plate.  It also keeps well in the fridge or a cooler, and microwaves well too without much loss of flavor or texture.  Good for a week in the cooler, and much longer if you freeze it.



There is no "fixed" set of ingredients for Dirty Rice, for the meat you use whatever you have available.  If it's Ground Beef or Ground Sausage, great and that will suit the typical Western palate these days, but you can use any meat at all for this, including but not limited to frogs, turtles snakes and alligators, or various gizzards like liver, heart,pancreas and I was recently informed by FarmGal even lungs can be made pretty tasty.  Haven't tried that myself yet though.  Also Roadkill is an option (the 2nd to last resort though).



Veggies are also mostly optional, although without the Holy Trinity of Celery, Onions & Green Bell Peppers you've drifted pretty far out from traditional Dirty Rice.  One ingredient you can't dispense with though is the rice. lol.



This vid also incorporates a discussion of best cookware types to bring along on a Bugout and a more extensive than usual accounting of costs on the meal.  Important factors as you plan for SHTF Day.  Further recipes utilizing Dirty Rice will be coming in the bye & bye as well.  Terrific for Breakfast, Lunch or Dinner, or even as a Midnight Munchy.

Also known as a Vegan's Wet Dream, fried rice is an Asian staple, and also a staple at the hot food counter in the Food Superstores of the FSoA.  However, most Amerikans don't cook fried rice (or "flied lice" as the Middle Kingdom dwellers pronounce it) at home, despite the fact it's a very EZ dish to prepare and really will spruce up any meal as a side dish.



You can put just about anything into your Flied Lice (including Roadkill), and it certainly doesn't have to be all Vegan, although this recipe is.  Pork, Chicken and Shrimp ae all popular additions to throw into your Fried Rice. I always worry I don't do enough Vegan recipes because I am a Meatosaurus and most of my favorite dishes contain animal protein & fat of one sort or the other.  So this was a good oportunity to do an all-Vegan dish I really like, which is also cheap and versatile and microwaves well when you make up a batch larger than you can eat at one sitting, which I almost always do.  You just can't do any proper cooking for one person in small amounts, one of the reasons eating is generally a communal affair.



In many respects fried rice is quite similar to the Cajun(Dirty) Rice recipe I did the cook for a couple of weeks ago, the main difference being the type of spices and sauces you use and the fact Cajun Rice is heavy on the meats.  You can't do Cajun Rice without meat, but you can do Fried Rice without meat.



In the video we also discuss the food-related collapse issues of food currently being shipped over long distances, availability (or lack thereof) of various veggies after SHTF Day arrives at your doorstep and the exorbitant price of Veggies (already!), among othe collapse topics.



Stock up on RICE!  The rice I used for this recipe is minimum 5 years old, it might be a decade old.  I didn't date my preps back then.  Still fine, not even Vacuum Sealed (though I recommend this).  Also recommended are good 55 Gallon Steel Drums, which nothing is getting into besides maybe water, but you can wax-seal them and make them pretty impervious to that also. No rodent infiltration in my stash for this one though, no weird fungi growing, nada, just good old rice.  Very old. lol.



For the veggies, get those permie gardens going, or some hydroponics.  For the meat (if you wanna add some), get practicing with your sling to nail some pidgeons and chipmunks.  It will taste just like the stuff from the takeout counter of the local Chinese restaurant or Food Superstore.   Eat well in Collapse!

Related image It's doubtful I could find any other Premium Meal easier to cook up while on a Bugout or living out of your van after losing your home to foreclosure after having your job as an IT developer outsourced to India than this one.  It's premium because it does come in above the general SNAP Card budget of $5/day, but if you watch your pennies all week and stay under budget, you can afford it as a special "Fish Friday" meal. πŸ™‚  This meal came in around $7, but I keep it simple with no veggie, just the fish.  I could have added a Baked Potato for another $.50, but I wasn't that hungry so I dispensed with that.



Our Crustacean for the day to consume is not the expected Alaska King Crab since I film these shows here on the Last Great Frontier, but rather a tasty treat from the Right Coast, a Maine Lobster tail!  I would have preferred a full live Maine Lobster to cook up, but you can't get them here in the Matanuska-Susitna Valley.  So no Claw Meat πŸ™ which is my favorite.



Since the cook is so EZ, most of what is interesting in this video (if anything) are the collapse related factoids I dish out while watching the pot boil. lol.  Anyhow, this one is short @ 12 minutes, so you won't be bored for too long.

I decided to move my Cooking Zone videos from Saturdays to midweek, because 2 days in a row of RE vids with the Morning Collapse Wake-Up Call that comes on Sundays is probably a little much for anybody, except my most rabid fan club and there aren't too many of those folks.  Maybe 20 or so.  lol.  Also, Breakfasts are a weekday thing before school or work, on weekends you are too hung over for breakfast and even the thought of food at 6 AM is nauseating.  Weekends are the time to sleep in and then have BRUNCH!  Also if you are still employed to go OUT to eat rather than slaving over the stove to do it yourself.  Plus, you never can get the variety at home that you can get in a good Brunch Buffet.

Go to a Buffet, you can have Quiche, Pancakes, Fresh Fruit, your choice of Breakfast Meats…etc, etc, etc.  Who's going to fix all that great stuff at home when you are hung over?  NOBODY!  However, even with bloodshot eyes, you can do a decent job with leftover Spaghetti and Scrambled Eggs.



This is not to say either one of these dishes is Super EZ like Boiling an Egg, both have tricks to them that can turn them from a crummy meal you will puke up with microwaved spaghetti and dried out or runny scrambled eggs (neither of which are all that pleasnt to eat) into a meal fit for an Oligarch!  In today's Cooking Zone I will give you the tips and tricks necessary for cooking up Scrambled Eggs and Fried Spaghetti at a Breakfast Buffet that the patrons would zoom past the Buttermilk Pancakes, Bacon and Quiche Lorraine to get to before they ran out.



As a Bonus on the financial level if you lost your home to foreclosure and are living out of your Stealth Van, this breakfast is easily prepared using your Electric Hotplate bugout cooking apparatus, and it comes in SUPER CHEAP, about $1 out of your SNAP Card Breakfast Budget of $1.66/day.  So that leaves over $0.66 to save for your Premium Meals at the end of the month, celebrating another month of SURVIVAL in a world gone to shit.

Here is a cheap, quick and very easy recipe which is delicious!
My wife cooked it 2 days ago and myself and my son wolfed it down.
Was very filling and tasty, and we are big eaters.
It makes 4 generous servings at less than $2 a serve. Even less for us as we grew our own garlic, basil and chillies. Will plant eggplant next season I think!

Pasta Alla-Norma (Mrs JOW Style)
Add 5 Table spoons of olive oil add 1 large egg plant diced, skin on, in 1cm cubes to a fry pan and cook through for 10 min. ($3.00 including oil)
Add 4 crushed crushed garlic cloves and a couple of chopped hot chillies.  ($1.50)
Add 2 cans whole tomatoes (Or fresh if available) and cook through until eggplant is soft. ($1.50)
Season to taste and once cooked, turn off heat and stir through a finely chopped bunch of basil. (1.00)
Serve on your favourite pasta. ($0.50)

If you are not penny pinching, I think would also be excellent with some mussels and black olives and maybe even a bit of bacon!

A few weeks ago I became enthused with a relatively new cooking method, Sous-Vide.  It's mainly used for cooking meats, maintaining them at the ideal temperature for developing the amount of "doneness" you like, be it rare,medium rare, medium, medium welldone or welldone.  If you like your meat well done, you can skip these vids,  just throw it over the heat until it has the texture of leather.  Bleccch!  I refused to cook any piece of meat well done my whole life, the only times they came out like that was by accident, I got distracted or something during the cook.



Sous Vide offered the opportunity to get a perfectly done piece of meat every time, with a lot of latitude on the cook times so getting distracted while cooking is not an issue.  Using really long cook times, you can tenderize tougher cuts of meat, much as you would on the BBQ cooking "low & slow".  However, that method generally only works with cuts like ribs, which you cook to well done.  Similar with cooking Brisket as Corned Beef or Pastrami, again you cook long but the meat is well done at the end.  I wanted rare meat at the end of the cook, which I prefer, but also tenderized for the tough cuts.



Image result for sous vide The issue with Sous Vide is that generally it takes an immersion heater that thermostatically keeps the water bath at a constant temperature for the entire cook.  The devices have been pretty epensive, $100-$200 in price, and when I started these experiments I didn't have one. Got one now though, ON SALE from Jeff Bozos at Amazon for $90. πŸ™‚  Great electric cooking device, lightweight and small and now one of my package of Electric Bugout Cooking Apparatus preps.



In this video and cook though, we do things with traditional equipment, Cast Iron cookware over a typical gas range.  Controlling the heat here and getting it to hold at the right temperature is pretty tricky though, even for a trained biochemist like myself.  I wouldn't recommend it for the average cook, I don't even recommend it for myself because it's such a hassle to set it up.  The Sous Vide apparatus is getting cheap enough now so it should be affordable for most people who haven't yet fallen off the economic cliff.  When Black Friday rolls around, I'll bet you can pick one up on Amazon for $50, unless of course trade with China is completely fucked up by El POTUS, Donalditry Trumpovetsky.



The results are fantastic, with every cut of meat I have tried thus far.  It doesn' obviate all the traditional methods, but is a great addition to them.  Once you try it, you'll be addicted to it.  At least you will if you are a Meatosaurus and not a Vegan.



Eat well in collapse.  You'll need the energy.

After last weeks Sous Vide Short Ribs with Portabella Mushrooms in Cabernet-Teriyaki sauce, I figured a Breakfast meal this week would be a good choice.  The Breakfast ended up turning into a Brunch though, because I was pretty hungry and decided to smush my Breakfast & Lunch meals together as a "Brunch".  I do this pretty often because really 2 fairly normal size meals is quite enough for me to eat in a day, I don't need 3 of them.  I also don't need to spend the time with prep and cleanup 3 times a day either!  In fact, ONE meal that is worthy of posting up the cook on here on the Cooking Zone is generally more than I can eat in a day and I get stuck with endlessly piling up leftovers!  A piece of advice: If you are going to do an internet Cooking Show, it's a good idea to have a family or a supply of friends to eat what you cook up for the show!  As a Solitary Man, I don't have all those other people to consume the edibles, so I gotta eat as much of it myself as I can.  Most decent dishes you can't really cook up for just one person.  The quantities the food is sold in for one thing makes it about impossible, but there are other reasons also.  You can't make a good stew for instance in a quantity of one meal for one person.  A minimum size for a stew would be about 4 servings, but even that is pretty tight.  More like 6-8 to be a reasonable stew cook.



I do try to adapt though and utilize my leftovers in creative ways, in this case one of the dishes incorporated into the Brunch was made from leftover Dirty Rice, the Stuffed Peppers.  Not a leftover but EZ, cheap and quick to cook up, Scrambled Eggs.  Eggs are just about a requisite item to include in any Brunch menu, and in this case I wanted to hand off some tips on making really good scrambled eggs, which is slightly harder than boiling an egg to do right.  Unfortunately, my camera quit on me during this portion of the vid, so you got the scrambled eggs without seeing how they were done.  I made up for this later by doing scrambled eggs for another breakfast meal though.



As always, as long as you haven't fallen COMPLETELY off the economic cliff and/or you're eligible for a SNAP Card, eating well here in the FSoA right now is mainly a matter of choosing your foods wisely and not buying tons of junk food.  In this episode, I do go over in detail what everything costs, and really it's no problem staying under the SNAP Card budget, even including some Blueberries and Razzberies, which are pretty pricy items by the pound, but you don't eaat that many of them in one meal and they last at least 2 weeks in the fridge fresh.  Frozen ones, obviously longer and they come in cheaper too.  However, the frozen ones are only really good in stuff like pancakes or pies, not just defrosting them and then eating.  You need to cook them in some way.



Next week, we'll do another Instapot Pressure Cooker Dinner meal, this time with a super cheap (as beef goes) cut of meat, a Chuck Roast.  Besides the Brisket, so far this is the only other cheap cut of meat I have done in the Instapot.  I may try some Pork Baby Back Ribs next, although I like them smoked so much it's hard to take a whole rack and drop them in the Instapot instead.  May have to wait until I am snowed in again and can't go outside to the porch to do the smoking for that one.

Another Breakfast dish this week from the Cooking  Zone of the Diner, but NOT eggs this time! lol.  today's breakfast potatoes are fixed as Home Fries, which should not be confused with hash browns which are also good, but not prepared the same way.  Home fries were my favorite from my youth, and one of the first things I learned to cook as a breakfast food, along with leftover fried spaghett, which I covered in a previous Cooking Zone episode.



Image result for potato tower Besides being high in energy content and cheap, potatoes are one of the best veggies to grow yourself in the garden or even on your porch if you live in an urban or suburban environement.  You can use a "Potato Tower" and get a greater density of potatoes per square foot than you would get with more traditional gardening methods.



Image result for alaska Grown Besides the advantages of having a high energy content in calories and being able to easily grow them at home, they also grow well in a wide variety of locations.  Along with Carrots,Alaska Grown Ptatoes are the crop most grown up here commercially, and even though they come in a little more expensive (not much, because potatoes are generally a cheap vegetable to buy), I buy them to support Alaska farmers.



You do need to grow Onions also for the Home Fries, but all the Root vegetables do well up here.
